I made the strawberrry souffles twice, and they come out amazing. Pretty easy, very tasty, very light (way lighter than I was expecting, and I definitely prefer it a light dessert), and pretty quick to make for a dessert. I also skipped the sauce because it seemed really rich and super sweet, and I don't like super sweet generally. The only downside is that the souffles sink fairly fast (starting after a few minutes), so you have to serve them fast. That makes them a little hard to serve to more than a few people at once, but that's just the way souffles are. Also, I am eager to try using other fruits in the same recipe (oranges, blueberries, etc.) to see how they come out; I see no reason why they wouldn't come out just as well.

So me and my younger brother made the espresso souffle cuz quarantine. Since hes young we replaced it with coco powder. We only had a thicccc bowl so we made one big serving instead of two and doubled the cooking time. My brother devoured it! Success!!!

If you try to make this yourself they are missing a lot of steps, you need to ALWAYS butter and at least sugar the inside of your ramekin (you can use stuff other than sugar like crushed nuts and sugar etc.) but you should always FREEZE it before you put your souffle mixture into it! It will help it rise! ALWAYS bring the egg whites to a stiff peak and fold them gently into your flavouring so they stay as ridged and fluffy as possible, soupy mix is not cool, it'll make the middle cave in like the cellulite on your ass and that shit ain't fun. Also to get a smooth top always smooth the top with an off set spatula or a butter knife for even colour. Also as a piece of advice: souffle will always collapse. ALWAYS. There's no real *tip* to keeping it inflated other than: don't open the oven while cooking as the sudden air temp with kill it, and eat it asap. You can literally watch a souffle sink on the dinner table and that's some sad shit. So make up only what you need and enjoy it immediately (so always have your toppings ready to go too)

I tried the strawberry and cream souffle. It was OUT OF THIS WORLD!!!!! The creme anglaise tastes almost like a Bavarian custard. So good!
