My grandma (mother's mother) died recently, and I didn't expect to get so emotional about a video on such a simple dish. But seeing her reminiscing about being 40 while she's 89 years old hit me just-so. I might not have these traditions, but thank you to Adiana and the Pasta Grannies for making sure they get passed on to me anyway 😢
This granny is an absolute wonder. She rolled out that pasta as if she didn't even have to think about it, the way someone who's an expert at something makes the difficult seem simple. Brilliant.

I'm from another country, but your cooking is the best. I'm desperate to be healthy, but I think eating is important. Both of my parents had dementia, so I quit my job and took care of them. Last year, they both passed away after 3 months. It was stressful. My parents passed away, and my body and my heart ached a lot. I got a brain aneurysm on my head and two brain aneurysms. I even had hypothyroidism, so I suddenly gained 15kg. I have to diet. Anxiety disorder Panic disorder I still suffer from insomnia. It's been a year since my parents died, but I'm still in treatment, but it hasn't been long since I started again. I started TH-cam, took a walk, and traveled because I had the courage to share and communicate. Now I want to be healthy. I hope everyone watching this video is healthy. Take care of your health first.

Adrian is the most wonderful lady full of happiness, such a joy to see her at work. She really knows her stuff, so professional the way she made her pasta. This dish is not unlike Pasta e Fagioli except we cook the pasta in the sauce otherwise very similar, the north make Pasta e Fagioli more soup like but in the south where my family were from it is much more a pasta dish like strozzapreti. Strozzapreti became my favorite pasta this past year, but this is a way to fix it I haven't seen. I am vegetarian, and the beans are a nice way to get some protein in. I have made a Calbrian dish with chickpeas.
Adriana has an amazing kitchen, I hope her grandchildren like to visit and eat things like this. Her great-grandmother made some impressively fine and regular lace, too. Can't go wrong with beans, fat and salt of some kind, I bet this is delicious. I'd have to sub in something for the lard, of course, but kidney/inner skin fat is tricky to replicate in terms of what the slow release of very concentrated fat does for things cooking with it...probably adding oil in two batches at the start/middle would be closest and easiest, though frozen butter and letting more steam escape would also work if the butter was high-quality and high fat.
