What We Eat In A Day | Using Cuckoo Bread Maker

We wanted to show how versatile and easy it is to make everything from yogurt, bread, to dessert. You can choose from 15 preset menus or customize your own!     RECIPES:
    Yogurt:
    1000ml (4 1/5 cup) milk
    100ml (7 TBSP) Greek yogurt with live culture
    Combine the ingredients into the baking pan with the kneading paddle. Mix for 10-15 seconds. Select menu setting #9 (Yogurt) and hit START.
    ***Strain the yogurt for a thicker consistency or chill the yogurt in the fridge as is.
    Milk bread:
    2 1/4 cup (330g) all-purpose (A/P) flour
    1/3 cup (79ml) boiling hot water
    1/2 cup (118ml) milk, lukewarm
    1 TBSP sugar
    1 tsp salt
    2 TBSP unsalted butter, softened
    1/2 tsp instant dry yeast
    Drizzle hot water into the flour. Set aside to cool.
    Add the milk, sugar, salt, and butter into the baking pan with the kneading paddle. Add the flour to the top and make a small well. Add the instant dry yeast to the well. Select menu setting #6 (Sandwich), 1.5 lb, light crust, and press the START button.
    **If you want to shape the milk bread, pause when the timer is 1 hour 55 minutes (right after the 50 second kneading). After shaping, place the dough back into the baking pan and press START to resume the program.
    Croque Monsieur:
    6 slices of deli ham
    3 slices of Swiss cheese, or cheese of your choice
    1/2 of the milk bread dough
    Roll the milk bread into an oblong shape (10in x 5in). Arrange the ham and cheese on the dough. Fold the sides of the dough to the center and roll up the dough. Make sure to keep it tight and seal the end.
    Béchamel sauce:
    2 TBSP unsalted butter
    2 TBSP A/P flour
    1/2 cup milk
    1/2 cup heavy cream
    Pinch of nutmeg
    Salt and pepper to your taste
    Melt the butter over medium heat and add flour to make a roux. Mix and cook until bubbly and the roux smells kind of nutty, about 1-2 minutes. Add the milk and heavy cream and keep stirring until the béchamel becomes thick. Turn off the heat and season with salt, pepper, and a pinch of nutmeg. Chill until needed.
    Pork katsu:
    Pork loin or tenderloin
    Salt & pepper
    A/P flour
    1 egg, beaten
    Panko
    Oil for frying
    Shredded cabbage
    Katsu sauce
    Preheat the oil to 350°F.
    Tenderize the pork loin, if you wish. Season with salt and pepper. Dredge the pork in flour, egg, then panko. Fry for 4-5 minutes, or until golden brown and the interior registers 140°F. (The fry time depends on the thickness of your pork and how cold it is going into the oil.)
    Remove and let them rest for a few minutes. Assemble on milk bread slices, shredded cabbage, and katsu sauce.
    Katsu sauce:
    1 TBSP ketchup
    1 1/2 tsp oyster sauce
    1 tsp Worcestershire sauce
    1 tsp sugar
    Mix together all the ingredients.
    Carrot loaf cake:
    3/4 cup (177ml) vegetable oil
    1 1/2 cup (330g) brown sugar, packed
    2 large eggs
    1 tsp cinnamon
    1 tsp baking powder
    1/2 tsp baking soda
    1/4 tsp salt
    1 1/2 cup (210g) A/P flour
    1/3 cup chopped nuts
    1 1/2 cup (150g) carrots, shredded
    With the kneading paddle attached, add the oil, brown sugar, and eggs into the baking pan. Add the cinnamon, baking powder, baking soda, and salt. Add the flour, and place the baking pan into the Cuckoo bread maker and the chopped nuts into the auto nut/ dry fruit dispenser.
    Select the menu setting #13 (Cake) and light crust. Let the bread maker run for 5 minutes then add the shredded carrots. Pause the bread maker and scrape down the sides of the pan if needed.
    The loaf cake is done when you insert a toothpick in the center and it comes out clean. Let the cake cool at room temperature until completely cooled.
    Cream cheese frosting:
    8 oz (226g) cream cheese
    1/3 cup sugar, or more if you like it sweeter
    1/2 cup (118ml) heavy cream, or more for a thinner frosting
    Whip the cream cheese until pliable. Add the sugar and whip until combined. Add the cream and whip on low until smooth.

    Y’all just got a third Michelin star😊 for coffee i like the min mojito from phillz coffee in california. It’s basically a latte with spearmint , brown and white sugar, milk with some half half 🎉u might like the Katsu sauce with some honey

    Do you have to use ultra pasteurized, ultra filtered milk to make yogurt in this? I usually do a cold start yogurt in my Instant Pot, but it requires the above type of milk. It would be nice to buy regular milk and do a simple, cold start method with the Cuckoo.

      Hello! It works for any milk. But it helps using ultra pasteurized milk to help prevent the wrong cultures from forming.

    My yogurt didn’t set after 8 hours. I used cold milk to the bread maker along with culture.. am I missing something?

      Hello! Starting with cold milk is fine. If you've added the correct culture and let it sit for 8 hours at the yogurt setting, it should have set, although it may look thin because of the whey. If so, you need to strain it to separate the whey. But if you're okay with the thinness, then you don't have to strain it. We used the EuroCuisine yogurt strainer, if you need a recommendation. Double sheets of cheesecloth works too.

    what brand bread flour do you use?

      We use all purpose flour for the recipe and the brand we use is central milling company from Costco.
