You can set the filter to "recent" and just in case you don't know what you got in your eggs, it will then show all your most recent acquired pokemon and you should know which ones they are because you probably haven't caught them recently.

You can just go to an empty, wide open field and find lots of brand new pokemon there.

My greatest tip to you is yes, you can find more rare pokemon by moving around, but you also generally get uncaught and rarer pokemon as you rise in levels, incense can also help with that. If all you're finding is weedles pidgeys and rattatas I'm gonna guess you're still somewhere around levels 3-8
