You are simply one of a kind. Thoughtful, engaging and a superb teacher. I’m spending my Saturday watching your videos and enjoying every minute. I miss living in Japan and your videos make me miss it even more. Thank You for all your amazing effort and skill.
Absolutely Brilliant! - everything about your production process is spot-on! - your expertise and superb ability to navigate the Japanese to English instruction is perfect. You could literally teach anything! Bravo!
Great eggplant recipes! Very easy and looks delicious. So looking forward to making them. Thanks for using that sized eggplant, and not the Japanese eggplant which is harder for me to get.
Vegetarian/vegan substitute for bonito flakes or dashi: kombu seaweed and shiitake mushroom. You can also find vegetarian dashi packets in Asian groceries. I even found it in an American store near the soy sauce. And of course use tofu or tempeh instead of meat.
Thank you for those recipes! They look/sound delicious and I'm looking forward to eggplant season to try them! I you have some ideas for zucchini, I would love to see them too -> I'm always lost on what to do with them.
Taiji: I just found your channel a week ago. I am Chinese came from Indonesia . live in San francisco now, at Jepan Town we have a senior center called Kimochi, They are serving Jepanese food too. I like to eat over there. So I like to watch your videos and learn some. Thanks for all of your videos.
I made the steamed eggplant with spicy sauce. Had a big eggplant so had leftovers second and third day and found the dish tasted better the longer I kept it in the fridge!
Hello Taiji, and thank you for these very simple and wonderful recipes. If you want to try a portuguese version: slice the eggplants, put them on an oven tray, drizzle some olive oil over it, plus salt, rosemary leaves and some minced garlic. Roast in the oven for 20 minutes. Deeeee-licious! 🤩🤩🤩
wow, that sounds also so delicious!! thanx so much for the tip! I will def. try it next time! (since eggplant is a Sommer veggie, I usually wait for its actual season)
thank you so much for sharing these eggplant recipes! i've been trying to eat healthily lately and these recipes fit the bill perfectly (also, i imagine them to taste amazing the day after) ごちそうさまでした 🙏
I'm salivating just watching you and listening to your eating with delight. Thanks for sharing your eggplant recipe. Now. I can cook and eat the eggplant 🍆. 😍😋
cool, from Canada! I got it as a bd present, so I don't really know, but it says Kuechenprofi (meaning kitchen professional in German). no idea, if it is sold also outside of Germany. but its the same as any old garlic smasher, I think.
@@Junglecat74 No problem! Hope you will find it, it’s not exactly the same but I find it even better because it’s made of steel, and the inner part is removable, so cleaning is very easy. :D
Do you ever salt the eggplant before cooking to draw out bitterness? 🤔 Also if you have gas you can char the eggplant to add a smokey flavour, very delicious 🤤
This is a man's cooking channel (wild with explosions, steaming hot hot eggplant you can't touch but man can touch, kinda messy darkish vegetable) 😆🤣😂 Anyway this was great lesson, 3 simple easy dish to make with 🍆 -- very entertaining 👍
The grilled eggplant in the oven gets more aroma and doesn’t explode if you cut it at least in half. And Mapo Something without Szechuan-Pepper is not „mapo“. But I like the combination with eggplant instead of tofu.

what kind of rice are you using?
I usually use Yume-nishiki. if you are in the US, I would suggest Nishiki.
