    I've heard people talk about Jack, and say that his problem is gluttony. I disagree, I believe Jack's problem is pride. There's no way he cannot see that the chicken is hot pink inside, yet he's too prideful to admit he made a mistake and will eat it anyway and act like it's supposed to look like that.
    Jack is the physical embodiment of the Dunning Kruger effect, he has the utmost confidence that he's an absolute master at cooking when he actually knows less than nothing..

    Jack does amazing things. He could "cook" chicken and it will come out of the oven more raw than when it went in. At some point, he's going to put in a raw chicken and it will come out of the oven alive.

      I am honestly surprised his family isn't in the hospital constantly with food poisoning, or that they haven't gotten salmonella poisoning either. It has literally been beaten into us that chicken must be cooked through, now people used to bloody incinerate the bird a few years ago but we've all realised that we can have tender chicken that is cooked through and isnt so dry you need a glass of water just to swallow it, and as long as there is NO PINK what do ever, it's safe to eat.

      To be honest, it isn't really that astounding. He was brought up around certain, let's say, "interesting" food combinations growing up, and probably learnt to cook through other members of family, and has taken on a role as a "self-taught" chef. To him and his family, there isn't anything wrong with the food and the combinations he makes.
      Let's give him some credit. He has been on TH-cam for a long time. He has remained consistent as well. He hasn't hit mega popularity but still makes videos, and despite the criticisms and some hate and mockery, he still keeps uploading. End of the day he and his family like the food he makes, so he isnt going to stop making what he enjoys, and I think people need to realise that peoples tastes are different, it's fine to be perplexed but I don't think people should mock him for it, clearly enough people are interested as he has remained on the platform a long time.
      The one issue I have is that when I watch people who aren't trained chefs, people almost expect them to do things the way they do, like putting things into the small pinch bowls instead of out of the packaging or other containers, and cutting food a certain way or they get roasted for not being "professional" enough. These youtubers aren't trying to be professional. They just share the food they love with us, and I think its unfair to hold them to a chef standard.
      Jack seems like a sweet guy, his tastes in food is certainly not one I have ever seen but then again go back to some cook books of the 50-70s some of the recipes in their.. oh boy.. search aspic.. or the edible candle.. yikes.

      @@gemmacook1753 I'd say there is a difference between having tastes in food, And then the cases where Jack is serving people raw/undercooked food. Like the turkey he made for an overseas soldier or the omelettes he decided to sous vide in plastic bags with the intent to share with the family. If this is his personal preference of food, then goddamn he's a force not to be reckoned with, but at the same time his cooking can genuinely make people very sick, that's where the problem lies

    That said, I'll never forget the restaurant review he did of a BBQ joint where he complained the chicken was overcooked and dry. Sheesh. It was cooked properly.

    The problem with Jack is that he refuses any form of criticism. If anyone tries to give him tips or advice, he will either ignore it or tell them they are wrong and he is right. It explains why he can do this for so long and never get any better.

      Setting aside the redundancy of putting 'legit' and 'straight up' together, you could just say 'It's pink inside.' Nobody would assume you were lying, exaggerating, being figurative or being ironic. They would see the video themselves, with that pink ass chicken in it, and know by the use of basic thought that your observation is legit.

    I love part 2 where he admits to forgetting about the chicken in the oven and doesn't completely soak it so it's allowed to actually cook and crisp up. He then blames it on the rub for making the superior chicken to the wet marinade and not his accidentally cooking something for once.

    the theory i think is more likely is that jack simply enjoys undercooked chicken. it's the consistency with which he underdoes chicken that convinces me he wants it to be pink, no one could so regularly screw that up if it wasn't on purpose.

    I know I said this on another video about Jack by someone else, but it bears repeating: Jack knows what cooks and chefs do, but not why. And he can't be bothered to learn. He isn't even remotely interested to learn even a single extra fact about how cooking and baking work. He hears people talk about brines and marinades and rubs, he sees people putting things on the chicken, but can't be bothered to even google any of these terms to learn more.

    That drumstick he bites in the buttermilk video makes the steam bag chicken look over... Buttermilk video actually has one of my all time favorite TH-cam moments when he pulls a lump of poultry gore from the bowl of milk and is completely perplexed as to what it can be.

    Regarding rare chicken, in China especially southern provinces like Canton we eat White Cut Chicken, which could be rare sometimes (with the meat thoroughly cooked but the bones are still pinkish to dark red). It’s delicious but also very tricky to cook so we usually just buy them from food stores or restaurants.
    That being said, Jack’s chicken is visibly red in 15:00, so that’s not even rare😢

    I can recommend you his video about italian chicken and polenta and best burger - comfort food video.
    In the first one Jack's oven somehow bends space and time continuum, while "cooking" a chicken and in the second one he gives us a burger take so hot you would think he works for BBC Food

      The chicken is likely cooked in the polenta video but done in such a way that the dark meat looks red. The burger take is so nonsensical that repeating it would make me sound like I’m making it up.

    The reason why he likely doesnt know what the chicken neck is when he pulls it out is because in most store bought whole birds the gizzards and neck are stored inside the bird. So he never removed them or knew they were there, and thus when they were marinated in the buttermilk they came loose and were able to float out.

    There’s a really good buttermilk marinated chicken from Salt Fat Acid Heat by Samin Nosrat. She has you roast it at a higher temperature and rotate the bird to different areas of the oven so it browns evenly. It’s SOOOO delicious. The skin is delicious and so crispy, and the meat is so creamy and tender (when cooked properly to a safe temperature which I double checked with an instant read temperature).

    I'm convinced Jack's channel is parody. There are so many little things he does that are hilarious and subtle. Like from the order he puts ingredients into the bowl, to not mixing things, to everything being undercooked. The man will struggle to tear a piece of meat with his knife and fork while saying "watch it just fall apart." He's been doing this same thing for 15 years, there's no way he doesn't know exactly what he is doing.

    Now with just about any other channel, I would automatically assume that the bowl of "wet rub" and chicken was covered and placed in the fridge overnight. But this is Cooking with Jack and I saw no signs of covering or refrigeration, so now I'm worried that it just sat on that counter the whole time.

    My mom recently did a whole buttermilk-marinated roasted chicken, and she said it was one of the best roasted chickens she ever made. She showed me a picture of it, and it looked fantastic. Even browning all over. She patted the thing dry before roasting it, mind you.

    Great video! I just had to say that breast side down for certain applications once the chicken is cooked through gives a really juicy result. As long as you don't want crispy skin and it is cooked through, all of the juices and natural oils from the dark meat will drip down and keep the breast meat tender. As we all know dark meat is more forgiving. I use breast down method when I will not be doing a presentation of the whole chicken. For example, sandwiches, soups, stews, slow roasted or smoked, sliced for ramen. It is tedious to remove the skin once cooked but well worth the result.

    Listen Jacks “wet brine” actually taste great you just need to make a few adjustments. First pat your chicken down to remove the excess brine it will produce a better product. Next increase the oven temp to 375-400 based on your cooking vessel. You can alternatively tent the breast to avoid overcooking just make sure to remove the tent towards the end of the cooking time to finish the skin. When removed let your chicken rest for 15-20 minutes. If you have a good nose you’ll be able to smell when your chicken is done..other wise cook for 45 minutes at 400 (not exact) or an hour at 375 (also not exact.) Jack’s chicken is viciously undercooked but correct those major errors and you will have yourself a tasty bird!

      When it comes to poultry I would never depend on smell to tell whether it is done or not. I'd much rather be safe and use a thermometer or go by color and if juices are clear.

    I’m glad you are pointing out how what Jack is doing is unsafe. I can see a number of people who are following what Jack is doing and ending up sick. 🤢 I so wish Jack had cut up the chicken, breaded it and deep fried it. That would have been awesome! 😋 That being said, I kept looking for ways to save this train wreck of a recipe, and I thought maybe if Jack had dug out the BBQ and rotisserie roasted the chicken, maybe that would have saved it? 🤷🏼‍♀️ Otherwise, it was a sad waste of a good chicken.😓

      I think with Jack, he's stuck in this oldtubers mentality of everything has to be marketed in hopes of getting a sponsorship. So anything that goes in your mouth is the most delicious thing ever. Any product you touch is the most amazing.
