How do you switch sounds on the second keyboard when playing live

He change the volume of the voice he wants to use on the keys.
For instance if he is playing organs and what to switch it to synth brass he will just low the volume of the organ and increase the volume of the synth brass .

You need to really master your keyboard.. Know the tones of head. And observe by listening to how other professionals use the tones.
