This might sound crazy but I literally NEVER replace the eggs in any of my bake goods. I have never had any problems with structure or binding. Apple cider vinegar, cutting my flour with tapioca starch, adding vegan yogurt (especially for chocolate cake) or a few table spoons of silken tofu works like a charm, sometimes xanthan gum and I always use cream of tartar and use liquid sweeteners along with sugar i.e. agave or maple syrup. These are a few ways I've altered my recipes around the egg issue. Here's another surprise, I don't use plant milk, I used water instead and I find it gives more consistent results. The cakes are moist and don't crumble, same with cookies. It's all about ratios of fat, liquid and dry. Also, this is not a delusional vegan speaking, my bake goods have been tried by friends who are pro bakers and they are always shocked.
I like you a lot, first time viewer. But I did try that vinegar and baking soda mix, made the worst corn muffins ever - in edible, not even for me (and I’m not picky). They absolutely did taste like vinegar and did not rise. I don’t think I did anything wrong. Do you have to put it into the recipe while it is still bubbling? Is that the thing?

I'm trying to veganize the Krusteaz brand cornbread. I'm unsure if the egg should bind the ingredients, provide moisture, or make it rise. What would you suggest?
Cornbread is one of those examples where the egg is doing #allthethings so I would recommend doing vinegar and baking soda but also adding a little applesauce for moisture.
I had great success with just adding club soda to a boxed cake (you can see the results here th-cam.com/video/oEU-A6g81Sc/w-d-xo.html) but I have to try it on a cake from scratch next and let you know how it goes!
