老豆皮燜豬肉
材料:
老豆皮一包(180克)
急凍五花肉一磅
薑一舊
乾蔥頭4粒
蒜蓉一湯匙
辣椒粒適量
蔥粒適量
處理:
1. 老豆皮,一開三,清水浸10分鐘。
2. 五花肉,打橫切片。
3. 五花肉,加入粗鹽2茶匙,乸5分鐘,去除雪味、腥味,及加入少許鹹味。
4. 薑,去皮,切片。
5. 乾蔥頭,去皮。
6. 老豆皮已浸軟,清水沖洗乾淨,揸乾水,擎乾水。
7. 五花肉,清水沖洗乾淨,擎乾水,廚紙索乾。
8. 五花肉,加入調味料:
a. 生抽一湯匙
b. 胡椒粉適量
撈勻,加入油一湯匙及生粉一茶匙,撈勻,醃10分鐘。
烹調:
1. 大火在鑊內燒熱油一湯匙。
2. 在鑊內加入蒜蓉,爆香。
3. 加入薑及乾蔥頭,爆香。
4. 加入五花肉,爆香至金黃色,轉慢火。
5. 加入調味料:
a. 豆瓣醬一湯匙
b. 蠔油一湯匙
c. 鎮江醋一湯匙
d. 糖2茶匙
轉大火,炒至入味,加入老豆皮,炒勻,加入大滾水300毫升,冚蓋,燜5分鐘。
6. 加入老抽半湯匙,炒勻。
7. 完成,上碟。
8. 灑上辣椒粒及蔥粒。
9. 可享用。
Braised pork belly with fried tofu skin
Ingredients:
Fried tofu skin 1 pack (180g)
Frozen pork belly 1 lb
Ginger 1 No.
Shallots 4 Nos.
Garlic sauce 1 tbsp
Chili cubes appropriate amount
Green onion appropriate amount
Preparation:
1. Fried tofu skin, cut each into 3 shares. Soak in tap water for 10 minutes.
2. The pork, slice it horizontally.
3. The pork, add in 2 tsp of cooking salt. Season for 5 minutes, to remove unpleasant smells and add some salty tastes to it.
4. Ginger, get it peeled and sliced.
5. Shallots, get them peeled.
6. The tofu skin has been softly soaked, rinse thoroughly. Squeeze it. Drain.
7. The belly, rinse thoroughly. Drain. Dry with kitchen towels.
8. The belly, add seasoning:
a. Light soya sauce 1 tbsp
b. Pepper appropriate amount
Mix well. Add in 1 tbsp of oil and 1 tsp of tapioca starch. Mix well. Season for 10 minutes.
Steps:
1. Heat up 1 tbsp of oil at high flame in wok.
2. Put garlic sauce in the wok, fry well.
3. Add in ginger and shallots, fry well.
4. Add in the pork, fry well until it turns into the colour of golden yellow. Turn to low flame.
5. Add seasoning:
a. Chili bean sauce 1 tbsp
b. Oyster sauce 1 tbsp
c. Zhejiang vinegar 1 tbsp
d. Sugar 2 tsp
Turn to high flame. Fry until the seasoning has been absorbed, add in the tofu skin, fry well. Add in 300ml of boiled-up water, cover up the wok and braise for 5 minutes.
6. Add in 0.5 tbsp of dark soya sauce, fry well.
7. Complete. Put on plate.
8. Put chili cubes and green onion cubes on top.
9. Serve.
