Beef, chicken or fish stock is mostly made from the bones. Think about that next time you buy those little cubes of bouillon at the supermarket...
I make chicken soup using the whole, free range, chicken for that very reason. I think people get put off from any bone or offal talk. I happen to think we were made to get the goodness from all of that stuff. We just got picky cause we spoiled little b*8ch**
