If you listen until the end you'll see she can do exactly what she does in the studio version, but uses falsetto in this recording for dynamic effect, which can be hard to achieve with such a strong voice whilst singing in an "unplugged" set.
Those same people couldn't sing the first half of the song with anywhere near the skill that she does. Her voice is fascinating within her natural range.

Being criticized for my voice not being "perfect" or hitting the note exactly "right" just fosters silence. If you don't love it, don't listen.
