Great trick! After you pressed CTRL + Z on 2:50 Hue/Saturation properties reset to default. It was further unclear where this difference in pixels came from, at least for me. Had to rewatch couple of times.
@@FrntRow CTRL+Z did one step back from Colorize to properties with Targeted Color, but photoshop displayed it like every option is default (I mean 0). As far as I understood, first, you target specific color with eye dropper tool, then make a copy of original layer and swith to difference.

Right today I was replacing background that had similar colors like the product on it and I made selection by using channels, mask levels, blending modes, blend if etc. The result is not that bad, but I will try tomorrow again with incorporating difference method.
