It's a lovely oven! Worth the wait! I was up to 450 with gas - and I find that's a great temperature for Neapolitan pizza. Looking forward to bringing the temp down and cooking some thin and crispy pizza with it too!
@@twocentspizza1792 thanks! My goal would be 480-490 as stone temp for neapolitan style pizza. But it might work better when I put my biscotto stone on top of the Ooni stones. We will see. :-)
@@twocentspizza1792 biscotto stones really make a difference, don’t they? Already in my Ooni Pro it made the neapolitan pizza perfect! Where did you order it from? And do you plan to put it on top of the Ooni stones or only the biscotto stone(s)? One square piece or also the second one in the back? Excited to see your test runs! :-)

@@twocentspizza1792 is it the low moisture Mozzarella or normal fresh please? As in the UK the fresh mozzarella comes in even fior de latte is super wet
wish I had 800 bones to spend on one these just got my big horn propane delivered today im sure it will fit the bill just cannot do anything bigger than 12 inches no matter 12 inches is good enough.

Yes it's drier than buffalo mozzarella. It's fior di latte. Much easier to work with!
