    Olá, aqui é a Artsuki e neste vídeo eu mostro como fazer bolo chiffon de pandan. Este bolo é um pão de ló de origem do sudeste asiático. As folhas de pandan são usadas para dar um sabor e aroma únicos.

    20cm Chiffon pan
    6 large egg yolks
    30 grams sugar
    50 grams vegetable oil
    30 grams coconut milk
    Pandan extract
    110 grams cake flour
    1 teaspoon baking powder
    1/4 teaspoon salt
    𝐌𝐞𝐫𝐢𝐧𝐠𝐮𝐞
    6 large egg whites
    1/2 teaspoon cream of tartar
    70 grams sugar
    𝐂𝐨𝐧𝐜𝐞𝐧𝐭𝐫𝐚𝐭𝐞𝐝 𝐩𝐚𝐧𝐝𝐚𝐧 𝐞𝐱𝐭𝐫𝐚𝐜𝐭
    100 grams pandan leaves
    250 grams water
    𝐂𝐨𝐧𝐜𝐞𝐧𝐭𝐫𝐚𝐭𝐞𝐝 𝐩𝐚𝐧𝐝𝐚𝐧 𝐞𝐱𝐭𝐫𝐚𝐜𝐭
    1. Rinse pandan leaves and cut into small pieces. Place the pandan leaves and water in a blender. Blend until smooth.
    2. Strain the blended pandan pulp and squeeze out the juice. Pour into a jar and put the pandan juice in the fridge for 2 days.
    3. After 2 days the extract has settled to the bottom of the jar. Pour out the water, and leave the concentrated pandan extract.
    4. In a large bowl add, eggs, sugar, vegetable oil, coconut milk and pandan extract. Whisk until well combined. Sift in cake flour, baking powder and salt. Mix well.
    5. Beat the egg whites until frothy. Add cream of tartar and beat until whites form soft peaks. Gradually add the sugar to the egg whites. Beat until firm peaks.
    6. Carefully fold the meringue into the batter. Use a whisk first and then change to a spatula.
    7. Pour the batter into a 20cm chiffon pan with removable bottom wrapped with aluminium foil.
    8. Move a chopstick around the pan to release air bubbles. Also, tap the pan a few times on the table. Place the pan in a bigger pan and pour about 2cm of hot water.
    9. Bake in a preheated oven at 150ºC for 60 minutes on the middle rack, top and bottom heat, no fan force.
    10. Invert the chiffon pan immediately. Let it cool before unmolding.

    Forma para bolo chiffon de 20 cm
    6 gemas grandes
    30g de açúcar
    50ml de óleo vegetal
    30ml de leite de coco
    Extrato de Pandan
    110g de farinha de trigo para bolos (aquela com baixo teor de proteína)
    1 colher de chá de fermento em pó
    1/4 colher de chá de sal
    Claras
    6 claras de ovo grande
    1/2 colher de chá de cremor tártaro
    70g de açúcar
    Extrato concentrado de folhas de pandan
    100 gramas de folhas de pandan
    250ml de água
    Extrato concentrado de folhas de pandan
    1. Lave as folhas de pandan e corte em pedaços pequenos. Coloque as folhas de pandan e a água no liquidificador. Bata até ficar homogêneo.
    2. Passe pela peneira. Despeje num frasco de vidro e coloque na geladeira por 2 dias.
    3. Após 2 dias, o extrato se depositou no fundo do frasco. Despeje a água e deixe o extrato de pandan concentrado.
    4. Numa tigela grande, adicione os ovos, o açúcar, o óleo vegetal, o leite de coco e o extrato de pandan. Misture bem com um batedor de arame. Peneire por cima a farinha, o fermento em pó e o sal. Misture até ficar homogêneo.
    5. Bata as claras com a batedeira até ficarem espumosas. Adicione o cremor tártaro e bata até obter picos moles. Adicione o açúcar aos poucos e bata até obter picos firmes.
    6. Aos poucos, adicione as claras à massa. Misture com o batedor e depois use uma espátula. Envolva delicadamente o resto das claras.
    7. Despeje a massa numa forma para bolo chiffon de 20cm embrulhada em papel alumínio e com fundo removível
    8. Passe um palito para espeto na massa para libertar bolhas de ar. Além disso, bata a forma algumas vezes na superfície. Coloque a forma numa forma maior e despeje cerca de 2 cm de água quente.
    9. Asse no forno pré-aquecido a 150ºC por 60 minutos.
    10. Inverta a forma de chiffon imediatamente. Deixe esfriar antes de desenformar.
