  • Ah Pa steamed the cod fish for 7 minutes in this video, I think it's ok to shorten for another one minute. Anyway, it still comes out soft and tender.

    Steamed Cod Fish
    Ingredients:
    300g of cod fish cutlet
    3 slices of ginger
    2 spring onion, bottom white portion
    Fresh corianders (to garnish)
    Fried garlic (to garnish)
    Steamed Fish Sauce:
    1 small bowl of chicken stock (Ah Pa is using homemade chicken powder mix well with hot water)
    1 tablespoon of light soya sauce
    1 teaspoon of garlic oil or sesame oil
    Pinch of sugar
    Few dashes of white pepper
    Pinch of salt
    Few drops of Ong Ky premium fish sauce

    My dear Ah Pa, say " dissolved", not "diluted"....hahaha, but It's all right, you are understood. By the way, people say, "It melts in your mouth" for tough chicken and steak when properly cook; but it's a silly Western expression for "tender and succulent". The piece of cod you steamed looks scrumptious! I will add two stalks (the lower, white part) of finely julienned scallion on top.

      I keep it together with my other sauce, next to my hob, not in fridge

    Do I need to wash the cod fish? Why you comment that we do not need to add shaoxing wine? Is this a healthy dish?

      To me shao xing wine is optional, just personal preference

    Why do we need to remove the fishy water?
    And is it ok to just steam the fish with soya sauce from the start, to cut down on one step? Thanks

      Chinese chef will always remove the steamed fish water to remove the unwanted fishy taste.
