I just made this dish in my Itaki and it was amazing! The chicken took about 45 minutes to cook, and with rice and some steamed veggies, this amount was enough to feed 2 people. Thank you so much for sharing this recipe!

It works much, much better if you dissolve the cornstarch in a tablespoon or two of water and then add it to the dish.

That's if you're trying to thicken a sauce, this is a different cooking technique called velveting.

It would still work if you used less water than you'd need to thicken a sauce or stew

@@BlueberryFundip the point was this is a cooking method that creates a tender and silky texture to the meat specifically. It's different than making a slurry to thicken the sauce, but sure it will still do that.

Why must marinate and refrigerate at least for 1 hour? Can i marinate in room temp? Also if i m busy can i marinate the night before and cook for dinner?

Marinate for flavor obviously, but also to let the corn starch work, it will help tenderize the meat and create a smooth velvety texture. It's actually called velveting, it's common in Chinese cooking. And yeah, you can do it over night.
