I have the C400. Insane. I kept one of my C70's. You'd be fine for a long time with either. Gorgeous image and functionality. Canon C80 is a mini beast too.
I’ve shot red, Sony, lumix, Fuji and canon Sold the red for a c70 great camera for fast pace productions or creative campaigns Ditched Sony since they can’t sort their highlight roll off LUMIX… great but no upgrade path to a cinema style cameras Fuji same I would go c80 and r5c if I was in your shoes. C400 is great but massive and you could get two c80s and cine L glass
I'd rather invest in glass, lighting, audio gear than a new camera. Canon cinema line is great, but what you're mentioning, maybe apart from the internal ND's, won't make much difference.
Definitely want a Cinema Camera too as I'm slowly progressing with my video skills! Would love for you to do a video of a Beginner's Rig for your Canon R5! Figuring out mine at the moment!
I'd really wanna upgrade too but can't afford it at all and idk of any other camera that suits me. My Fuji X-T3 recently start experiencing issues with autofocus on top of its being not that good in the first place 😭

Autofocus is a game changer man, I’d say the newer the camera typically better the AF

Usually would be team Canon but for cinema purposes Sony is pretty fire
