Hey Tony, try not to flatten the pancakes with the spatula, doing so squeezes out the air bubbles and makes them denser and less fluffy. You’ll know when they’re ready to flip by the amount of bubbles forming and popping.
A cruise sounds great but people are fickle. I would just let people know the plans for the cruise and if they want to go they can set up everything on their own that way it doesn’t mess anybody else up if they back out. I’ve had people do that to me before too that’s why I won’t plan stuff like that anymore.
We use Butter Flavor Crisco for our pancakes. My older relatives, just use Crisco. My grandmother would make hers as big as the cast iron skillet. One for each man, and cut in halves or quarters for the kids. It was just easier to make one at a time than doing several with all the things you have to do to put breakfast on the table. And Anthony, I still feel you have to stop at Lowe's or Home Depot to pick up a pack of shims for all the leveling that needs done in your traveling life. They will be handy to have on hand, and most likely do a more suitable job.

That's a nice looking griddle. It looks like Silverstone surface. Anthony I went to $1.25 store & got a baking pan to use as a dinner plate/salad plate. That way I have room for a biggo salad or whatever. The pan walls keep the food from sliding off my plate since I usually hold my plate while eat.

Hey Anthony and FOA's, a cruise would be a great meet up. Out of the 18 cruises I have been on. 14 of those cruises have been to the Caribbean. I'm scheduled to do a cruise this fall going to Panama.
