i never knew exactly what Hokkigai was but ive seen it as Sushi/Sashimi items at restertants here in my town, one bigass clam! looks like itd be good eatin
that looks really good, in mexico we would eat those, but the clams are red, and when you put lime and salt, (the clam would be chopped into pieces) and all the little pieces would randomly become alive n squirm, its really coooool.
@Jo7777uuu русский 、日本人、or English - Sushi is for everyone. I write this from Japan, but place which makes this Hokkikai sashimi is between Sapporo and Chitose Airport - a great place for international visitors to have their first taste of Hokkaido Seafood.
doesnt matter if its dead or not, so long as its fresh and properly prepared its fine, if it isnt dead, it will be soon from being sliced into ribbons, some sushi/sashimi is made fresh form live animals, but typically here in the USA resterants import the raw fish and keep it fresh in fridges or freezers until they need to prepare it, so in most cases in the USA yes its dead, but be wary of Fugu sashimi, it can be lethal if not prepared properly, its a venomous fish and expensive as hell
I find it very hard to tell which part of a clam is which basically keeps it alive. Do clams have a brain? Is there a way to instantly kill them? Are they even capable of feeling pain?
but Fugu youll likely only find in Japan, its a delicacy and served as Sashimi but if its not prepared properly it could kill you due to the fish's venom in its skin/liver/organs, but your very unlikely to find that dish in resterants outside Japan, not only would it be crazy expensive to import, you also have to be specially trained and licensed to prepare and serve it as food, plus disposal of the venomous parts requires special containers which most non-JP resterants arent equipped to handle
as a Bostonian i love this.....but i love the belly too!!! they dont use it as well for flavor??? OMG to have a pint of whole belly clams and onion rings deepfried while sitting on the beach with a pint........
Then go for it. People will live their whole lives wanting to do something because they know they never will. Don't do this, you'll find strength in yourself you never knew existed. . . also anyone know what the name of that music is? it reminds me of donkey kong country but super relaxing x1982492???
No, he does not need gloves. The Japanese have been eating fishes, clams and shell fishes for tens of thousands of years. Though he does not look all too professional.
A clam has no immediately distinguishable features or vocal chords so people can easily ignore the fact that the clam is ALIVE while he is slicing it up. Do the same thing to a fish and watch everyone lose their shit.
+Mr2tails, grit is when you take the clam fresh out the sea, or leave it in a dirty tank or a tank with sand. If you leave a clam in a tank with no sand for a while, and make sure to clean it once in a while, the clam will have no grit because it would have spat it out.
wrong, if it was freshly dead itd still taste fine and smell normal, things only taste bad and smell rotton when they actually start to decay, and if you just killed the animal or if its in the process of dying from wounds, its not decaying yet, but yes, the animal is alive in this video
this is why i want to be a chief, the artistic beauty like in this video along with the idea of exploring new culture of food.
Good lord, that was impressive. Looks absolutely delicious!

Pleasure to watcht. Thank you. :)
With just two of those huge clams I could make some awesome chowder! Mmmm...
Orraaaa.
Thank you :)
i would like to see japanese cut like that on youtube.
Anybody know the music of this clip? Damn and I came hungry too! 2/3 senses served.

Because clams do not feel pain. They do not have a central nervous system. They are basically one step up from plants.
so thats what i ate!
a few appropriate jokes for this video:
- mother of cooking !!!
- cooking level over 9000
- c-c-c-c-COMBO BREAKER!
sukoie i love this
what is the huge mussels ?
Just a question: Is the clam alive, or is it already dead?
look yummy
fat and juicy clam, looks really tasty!!!

Funny thing is it was probably alive when this was done to it yet it gets so many thumbs up because people don't realize it
Wow!

how much is one plate?
yummy yummy
@TheJco101 yeah and what about plants? are you also saying that the way we handle them is brutal they are alive too ya know
@Refused2Break i think there currency is smaller there even thoug it seems more it probly isn't
You are one step up from plants.
I find it very hard to tell which part of a clam is which basically keeps it alive. Do clams have a brain? Is there a way to instantly kill them? Are they even capable of feeling pain?
2:46 Oh you fancy, huh? Just kidding, looks great! :)
dude if that pic is you I'm totally jelly of your hair.
so much presentation... so little food.
chef-
Umm....Song name?
The one question I always ask during shows like this is, 'Is it dead'? Because you can never actually know. -.-
@jamiluhh thats radish shavings
song name?
5 minutes to prepare, 10 seconds to eat. lol

I would like it if he washed the sashimi before he serves it on the plate, I don't mind the possible "loss of flavor".

Really nice, shame that the person who filmed had just discovered the zoom on his camera...
i wanna be a chief, and i also wanna be a chef oxo
i was eating all of that lol
Is it dead? Sashimi is thinly sliced, raw seafood. But it's fresh so it's safe to eat.
Beginning of video....Small clams..... Few seconds..... Damn they're big o.o
as a Bostonian i love this.....but i love the belly too!!! they dont use it as well for flavor??? OMG to have a pint of whole belly clams and onion rings deepfried while sitting on the beach with a pint........
@Refused2Break Well you don't just order one dish, you order several.
£1 clam they cut open and slice and make it look nice and charge you for £20..
dude....that sounds good. can we use a red wine or maybe a white? what goes good with red meat? or cook it with beer. no no...hmmm... you chose.

now that should be an expensive dish..
Looks at chef: You're ...not going to rinse it? D:
He should be wearing food processing gloves.
+Ricovali Clean hands. That's all you need.
CIlovecomedy7 yeah,tell that to Chipotle's.
Don't worry, this is not Chipotle ;)
No, he does not need gloves. The Japanese have been eating fishes, clams and shell fishes for tens of thousands of years. Though he does not look all too professional.
*chef
i caught many clams before and i stop eating them..guess why.... most have worms in them and its about the size of a bean sprout...
Clams are fresh dude. It only smells like the smell of seawater and a little hint of clam.
Clams cannot feel pain.

+michael jackson have you ever seen one -.-
his hands not clean even the shell and the chopboard what kind of preparation is that
his hands and the chopboard are already clean before preparing the hokkigai
Kurogane Tenzen Any idea how did the chef clear out the grit in the surf clam?
+Mr2tails, grit is when you take the clam fresh out the sea, or leave it in a dirty tank or a tank with sand. If you leave a clam in a tank with no sand for a while, and make sure to clean it once in a while, the clam will have no grit because it would have spat it out.

they should try to make mothers in law dishes, I can give mine so you can try something
