Thank you for the recipes and all the in depth information. I did this grilling method at my sister’s house for thanksgiving. I made pizza as an appetizer while they were in the kitchen all day at the oven. Everyone loved it!
I've been baking pizzas on my charcoal Kamado-style grill since 2012. I bake them at 600 degrees F. I use a cast iron pizza "stone" and wood chips for smoke. I cold ferment my dough for 3 days. I make enough for 9 pizzas. I also use parchment paper to add and remove the pizza on the "stone." This helps with the assembly line. I stretch the pizza dough, put it on the parchment paper, and my wife adds the sauce and toppings. We consistently get comments like, "this is the best pizza I've ever eaten." People say, I'll just have one slice, but they come back for more and more. It's like the Lay's Potato Chip commercial, "you can't eat just one." Vito, if you can't stand the heat in Arizona, just jump into the pool. Nice one!
For me, who has made my share of good pizza, I just love watching Vito’s mastery around the dough. Every movement shows years of practice. And your subtle tips and temp management are what lifts everyone’s game. I’ll be precooking my crusts before adding the cheese from now on, among many other things. Love he sausage/rosemary combo!

I tried using this recipe but the polish wad very wet and as a result my dough are very moist as well. I m wondering whether it is the reason that I was using the dry yeast.
@@charleswong7502 when recipes call for the required amount of fresh yeast, and you only afford dry yeast, be sure to cut the amount of dry yeast in half because it's more potent than fresh yeast Let me show you an example, so I say you need to add 0.4 grams of fresh yeast, and you only have the dry stuff, so you divide it by two, turn it into 0.2 grams of dry yeast. Did you get that? (Unless you already did, then maybe you're using a flour that can't handle too much moisture, like a low protein flour)
Hi vito , i tried your homemade dry yeast recipe , it was good , but i have two questions , i don’t know why its not puffy on the edges like your pizza as if there is no air in it , i use gas oven , second thing you mentioned in the ingredients 1 litre of water to 1.5 kilos of flour , can i reduce the amount of the water because its very sticky while working the dough , so i add more than the 1.5 kilos flour to control it
@@maimoussa643 when you're stretching the dough, don't press the edges. That will keep the air in the crust. Vito has said in other videos that if the dough is too sticky when kneading, to cover it and let it rest for 15 to 30 minutes. After it rests, then continue kneading. Hope this helps.
@@maimoussa643 you don't need to knead shit to develop the gluten. Just let it rest and do stretches and folds. If you're any good, you can laminate it before said stretches and folds. About 4 will do the trick.

Hi Vito thanks for the detail you put into making the dough but I have a few questions. Did you use fresh yeast or instant yeast? If you used fresh yeast, how much should it be for instant yeast? And for the poolish did you have it sitting at room temp for 24 hours?

I love it, looks delicious! I have a question, I have a pizza steel and I think I overheated it at first time I tried... it got to around 550 on the steel... but I will try 450 next time and leave the side burners on only. When you put the pizza on the stone you raised the gas to max, I would have loved to see how hot the stone got for the second pizza to know if it was too hot? On another video, the poolish was 1hr room then then overnight in the fridge until needed (16-24hr) which seems to work.
