We put up 523 quarts and 173 pints so far still got some fish and later will be venison. We butchered 2 big hogs, 17 chickens and 2 turkeys this year. We are not preppers this is how we have lived way before prepping was a thing. My family loves banana peppers stuffed with sauerkraut. We have pear trees so we make pear butter. It's like Apple butter but just a little different. I'm happy to see young people like you canning. You and your family will survive just fine.
The pear raisin that you didn't like make a bread with it like banana bread. The cherries I make a preserve and add to homemade icecream or a topper. Beautiful pantry 🥰

I have canned all my life, but I can't wrap my mind around canning 55 jars of one kind of jelly and 50 jars of something else, etc. I just canned 16 jars of salsa last week and thought that was super. Also, I'm just in awe of wherever you and your mom live in that--wild berries, picked from her tree, etc. Way to go! I also LOVE the shelves. Thank you to your hubby!
I plan really big canning days where I can 100 or so jars at a time and that really helps to get to these larger amounts. Some days I feel like I have a family of hungry bears :)

The winner in my house for canned carrots was to use chicken bouillon cubes with water for canning them. I've used them in soups with great success leaving them whole and they were firm enough to not break up even with vigorous stirring and long simmering.
May I ask what general area you live in? You've done so much beautiful food preservation. My husband also made me nice canning shelves and I love going to the basement and seeing the food I've canned.
Perhaps the fruit mincemeat jars with all the fruit in them that you said tastes Off - maybe use them to make fruit smoothies with frozen banana or add with vanilla ice cream blended in blender to make milkshakes? Just some brainstorming how to use up.
Pam says- cherries make an excellent dump cake with pineapple or peaches. Also puree mincemeat and make spice muffins. Mix puree with the sweet potatoes and make pancakes or go savory with the sweet potatoes and a bean or lentil for an excellent potato bean soup. Just some ideas for you.
Lovely tour, can you share in make the shelves. They look so sturdy. As for the asparagus you could sautéed it with onions & peppers , garlic Himalayan salt & pepper & bit of pesto . Then spaghetti or any pasta with pesto and throw in some shrimps or pieces of fish or imitation crab meat. Mix & enjoy. Very easy recipe Thanks
I really don't do it all but social media can always seem that way! I do try to be very intentional with my time and I keep a more detailed planner now than I have before. It helps a lot :)

But when I do can I make a huge day of it, usually working from when I get up (5) until bedtime to get as many things done in one day as possible. I've found it to be easier that way for me because I don't have to get everything out more than once.

I noticed you've stack alot of you jars ontop of one another. Some say the limit is two stacks only. Does it matter how high you stack. I live in a apartment and low on storage room. Will it affect the jars?
Some people live by the 2 stack rule. For me it's personal preference and space limitations. I've never had any come unsealed because of stacking. The other thing to note is that I don't leave them stacked for very long, only a few months at most.
I agree about the canned carrots, prefer fresh cooked.. We like to add brown sugar when using canned carrots. Tastes pretty good. Didn't like them canned with the sugar in them. Won't canned carrots again.
I put puréed canned carrots in homemade macaroni and cheese and all use it in nacho sausage cheese dip . I have very picky eaters and they can’t tell. I also use it in spice cake . I canned a lot of them and I agree not my favorite . I hope this helps .
I thought you weren’t supposed to store jars on top of each other in case a seal breaks the weight could make it reseal and air will have gotten in without you knowing it.
While I don't stack as high as some of these, I do stack jars. My storage space is limited. The secret to stacking jars is to use cardboard, foam core poster board, 1/4" plywood or a thick layer of newspaper between the layers of jars. That helps spread the weight. I also loosely* put rings back on the jars that will be stacked. Thus the rings also help carry weight load and protect the seals. I usually stack pints 3 layers high and quarts 2 layers. FWIW.... Been canning since 1972. Over the years, once in a while a jar seal has failed, while in storage, for some reason. When that happened noticeable spoilage took place. When the seal is broken, immediately air rushes into the jar. With the air comes airborne bacteria, yeasts and such. Things that cause spoilage. If the lid then sticks to the jar, it doesn't form a true vacuum, in a sterile environment, again. There's oxygen in the jar that allows microorganisms to grow. The signs of their activity are a foul odor, excessive foaming, mold, and unusual color changes. The Healthy Canning site has a good article, with references, that may be useful. "Stacking canning jars in storage" Hope this helps. *loosely - Rings were removed from the jars. Jars with their sealed lids, along with the rings, were thoroughly washed, rinsed and dried before rings were put back on the jars. Rings are NOT screwed down tight.

Yes, the price on the freezer dryers is CRAZY! I ended up finding our at Runnings (farm store) and it was even cheaper than the sale price on their website. That's so exciting about your dehydrated though! That's all I've had up until the last month and it's worked wonderfully for us.
Lol, yes because I have mom brain and totally forgot I couldn't get them off the jars (sticky) when I put them away and meant to do it later. Got it fixed now!
It seems to depend on the type of cucumber. Some stay really nice and crisp and others lose it over a while. I'll have to ask my mom on the varieties, for some reason I can't grow cucumbers so she grows all of them for us!
I personally have a Presto Pressure Canner. I know a lot of people that like the All American canners but they were not in my budget when I bought mine. The Presto has worked wonderfully for me for over a decade now and my mom has had the same over for over 20 years as well. :)
i like the wood on the frout of your shelfs to hold the jars dos it need to be hitgher thoo ? im sorry this old fart dos not reed or right to will. any way your shelfs are better then most
The only items I store in jas with plastic lids are things that we are currently eating, no matter if they are the white or black :) I do like the black ones better though, they seem more durable.
As I mentioned in the video, we use many of the preserves as a base for various sauces (apricot, peach, plum, grape, etc) that we use on all different kinds of meals. The blended flavors (blueberry strawberry, strawberry rhubarb, etc) are the only ones that get used on bread.

If you make tomato bisques of any kind, puree the carrots and add them for sweetening/flavor. Maybe do the same with butternut/squash soups.

Those white plastic lids are not airtight, the black ones are.
