It Was the Best Lemon Cake I Have Ever Eaten!

  • Welcome to my channel! I'm excited to share this delicious Lemon Cake recipe with you. This cake is light, refreshing, and bursting with lemon flavor, perfect for any occasion.
    Let's get started!
    Ingredients (Lemon Cake):
    200 grams (1 cup) of sugar
    115 grams (1/2 cup) of softened butter
    2 eggs
    1/2 tsp vanilla
    28 ml (2 tbsp) of lemon juice
    187 grams (1 1/2 cups) of all-purpose flour
    1 ½ tsp baking powder
    1 tbsp lemon zest
    1/4 tsp salt
    112 ml (1/2 cup) of buttermilk
    Ingredients (Lemon Glaze):
    50 grams (1/4 cup) of powdered sugar
    2 tsp lemon juice
    1 tsp milk
    Cake Pan Size:
    20 x 10 x 6 cm (8 x 4 x 2.5 inch) or (9x5 inch)
    Baking Time:
    50-55 minutes at 350°F (175°C) in a preheated oven
    Prepare the Batter:
    - In a large mixing bowl, combine 200 grams of sugar and 115 grams of softened butter. Stir for 4-5 minutes until the mixture is light and fluffy.
    - Add 2 eggs, one at a time, beating well after each addition.
    - Mix in 1/2 tsp of vanilla extract and 28 ml of lemon juice.
    - Sift together half of 187 grams of all-purpose flour and 1 ½ tsp baking powder, and add to the mixture.
    - Add 1 tbsp lemon zest and 1/4 tsp salt, and mix until combined.
    - Start with half of the buttermilk, stir, then add the remaining flour, stir again, and finally add the rest of the buttermilk, stirring until just combined.
    Bake the Cake:
    Preheat your oven to 350°F (175°C).
    Grease a cake pan (20 x 10 x 6 cm) or line it with parchment paper.
    Pour the batter into the prepared pan, spreading it evenly.
    Place the cake pan in the preheated oven and bake for 50-55 minutes, or until a toothpick inserted into the center comes out clean.
    Prepare the Lemon Glaze:
    In a small bowl, whisk together 50 grams of powdered sugar, 2 tsp of lemon juice, and 1 tsp of milk until smooth.
    Glaze and Serve:
    Once the cake is baked, remove it from the oven and allow it to cool in the pan for a few minutes.
    Transfer the cake to a wire rack to cool completely.
    Drizzle the lemon glaze over the top of the cooled cake, allowing it to run down the sides.
    Slice and serve this delightful Lemon Cake with a refreshing glaze. Enjoy the bright, zesty flavors with every bite!
