How to clean your whetstones

  • This is the easiest way to clean your whetstones. Using Sabitoru Rust Erasers to clean whetstones has changed my life. The Naniwa dressing stone is the next best thing but wears too quickly for my taste. The rust eraser will save you time and money, and I have still used one that is 4-5 years old.

    I bought those rust erasers at your suggestion a good while ago. They do the trick very easily and my whetstone felt so slick and more effective afterwards. They're cheap too; really great.

    Do those rust erasers change the surface grit on the stones? Meaning making a very fine stone cut coarser?
    Do you have a video on flattening Stones?

    • @rowanfernsler9725
      @rowanfernsler9725 4 ปีที่แล้ว +1

      Whetstone flattening and maintenance, a video by him about flattening. The rust erasers shouldn’t change the grit. The very top surface may get a little changed, especially if you use one that is really coarse. But, after a few passes it should be back to normal for the most part. If not, fine sandpaper, a nagura, or something similar will bring it back.

    • @MattPfist

      no, I just used the rust erasers. It takes off as little of the stone as possible. It also does not alter the grit of your whetstone.

      I tried cleaning the 6000 grit polishing side of my King 1K/6K combo stone, which needs cleaning pretty regularly in use, and the medium grit sabitoru rust eraser seemed to be leaving finer particles embedded in the polishing stone surface. I didn't like the feel of that - wasn't sure if was a good idea to continue. Anyone found that in the higher grit stones? Maybe I didn't soak it in water long enough - Sabitoru recommend soaking for a while

    Hi, you know something that I tried recently to clean a stone was some 600 grit sandpaper. I was refinishing a blade and had an assortment of wet/dry sandpaper and I just gave it a shot. I made sure that the surface of the stone was nice and wet and just used light pressure. It worked very well and I also used it to round off the edges a little. I am not sure if there are any negative side effects to this such as grit contamination but the sandpaper grit certainly does not become embedded in the stone. It is very inexpensive of course and simple and quick.. (I am not suggesting I thought of this, I just haven't seen this method used to clean the surface of a water stone before). I have been doing it now for a few months and I have used various grits from 600-1,000. Give it a shot :)

    • @seanb6986
      @seanb6986 6 ปีที่แล้ว

      I find that 2000 grit sandpaper does the job even better; it cleans the surface nicely, and flattens waterstones slowly so that you can use the sandpaper with every use without any problems.

I won't use the 800 grit stone on a new factory finished razor, but the 3000 Chosera and the 8000 and 16,000 Sharpton Glass whetstone to finish up the honing! • @alexpearson8481
      @alexpearson8481 6 ปีที่แล้ว

      Yup. Good approach. Eventually you Will have gained most of the academic knowledge. At that point you need serious sharpening experience. I started becoming quite confident and very effective after 200 - 300. Don’t worry you won’t wreck your knives. But eventually you’ll be able to get them razor sharp without thinking about it. Eventually you’ll learn your own tricks that even TH-cam won’t tell you about. Even after 400 sharpenings, I recently had my wire- burr edge after sharpening on a fine 3000 grit come off the blade just like a fine long hair. Lol. I’ve yet to see that on TH-cam, by anyone. So give yourself some time and after a couple years he will be very good. I’m thoroughly convinced anyone can be as good as Japanese if you apply yourself and our OCD enough.

    Here's one thing people should understand about naguras...they aren't great for cleaning up an already loaded stone, although they will work. Their biggest function is raising a slurry BEFORE sharpening so that significant loading doesn't take place to begin with. Especially with higher grit finishing stones they'll also act to increase the feedback and improve the overall feel of the stone. Some stones really feel much better when they're hit with a nagura first, I'm thinking stones like the Kitayama 8k, Arashiyama 6k, the fine grit Shapton Pro/Ha No Kuromaku stones (even though Shapton will tell you NOT to use them 🤷‍♂️) etc. The fact is a rust eraser simply can't do everything a good nagura can do. For strictly cleaning loading, sure they work fine. And not all naguras are soft. Naniwa makes a line of them now (although they are pricey like all things Naniwa) that are actually very hard and will last a very long time. Certainly far, far more than the blanket "20 times" stated in this video. They are hard hard, like Shapton Pro hard. My point is don't forget about naguras and just buy a rust eraser after watching this, you'll miss out on some of their primary functions and and intended uses. Their use is more complex than cleaning an already loaded up stone

    if you arent a professional chef, japanese chef, or need your knife to be insanely sharp and super precise, just get a cheap nagura stone. nagura stones basically has 2 primary functions, clean and correct. the most important function of a nagura stone is to correct the shape of the whetstone; from convex shape back to its original flatten shape. after long usage a whetstone surface can become inconsistent (no longer flat/convex shape) and this can become a problem when sharpening knives especially on lower grit stones whereby a slight error in the angle can cause your edge to be damaged or the stone to be damaged. the other function is to clean; remove metal shavings from previous sharpening, accumulated dirt and whatever thats making it dirty. the only thing you probably need to take note is to not use a lower grit nagura stone on a higher grit whetstone. e.g. for 3000g whetstone, use a 3000g nagura or higher but not too high. you dont want to use a 3000g nagura on a 800g whetstone either, you will just destroy the nagura stone before you can even clean out or flatten the 800g whetstone.

    So I have 6 wurstoff steak knifes that I sharpened on a 400 grit 1000 grit then 3000 grit and then 8000 grit. They have some big chips. So should I try and fix the chips if so how? Or should I buy new steak knifes if so what is a good brand in $150 range for 6 knifes with decent metal?

    I see you've listed many favorite whetstones. I tried going through all your videos to see which to use but still a little confused. You normally go with the 800 grit and stop? When would I use 1000 or 3000 or 5000 or 8000 grit?

    What do you mean by cleaning whetstone, does it simply mean to flatten it or does it have a different meaning behind it?
    Can we use any cheap (no brand) flattening stone instead of using the rust eraser or quality flattening stone?

    • @Burrfection
      @Burrfection  11 หลายเดือนก่อน

      cleaning is simply removing load up on the stone. you can flatten, but that takes off a bit more materials, and costs a lot more money to get a flattening stone, than just a stone cleaner. i use the atoma 140 for flattening, but it's pricey burrfectionstore.com/collections/accessories/products/atoma-diamond-sharpener

    Nice video, do you sell and send your leather strops to europe? If so, is there an extra cost? What quality leather do you advise for a beginner? Thanks!

    • @Burrfection
      @Burrfection  6 ปีที่แล้ว +1

      i do ship to EU. but, when you factor in shipping, you might want to look on ebay, or a local seller who sells strops. i'd say, if you want to buy from me, consider the shell cordovan, or buffalo, since they are probably much more expensive if you go elsewhere, but if you really just want a leather strop, just pick up a latigo leather strop locally, since you'll save money on the international shipping.

    Those rust erasers cleaned my shapton pro 8k well but left a rougher looking texture than my atoma plate which leaves it "glassy" looking. Could this affect the finish and/or speed of sharpening? Iirc the shapton website says the stone should have a "mirror like" finish.

  • @bikess22
    @bikess22 6 ปีที่แล้ว

    I aggree the Shapton Pro 120 is fast cutting but faster wearing than the rest of the Shapton's. I like it too, but is there a faster-cutting super coarse stone--perhaps the Atoma 140 or DMT coarse Diasharp? For cleaning whetstones, rust erasers are better than Nagura's and cheap coarse dressing stones. When you say the latter will "destroy" your whetstones, you mean only that they will abrade them, not damage them--right?

  • @RobertWentzellIII

    Great Video, is rust eraser still your go-to cleaner?

  • @kaymanul
    @kaymanul 6 ปีที่แล้ว

    Haha. And I thought I was the only one using the Sabitori rust eraser. But it's the rubbery version, that won't wear the stone as much and will put a fine surface. I do have this medium coarse duo as well for about 2-3 years now, but I like that one more. It's almost new after all these years.
    Worse dressing stone for me could be that Naniwa chunk from Chosera packs. Not what I would expect from top notch series (they could learn something from Suehiro here). I couldn't use it on anything from #400 to #12000. Just didn't like it at all as it was. I think it works better if the surface of the nagura itself is prepared on a coarse diamond stone from time to time. I did try this and it made a visible difference.

    I am not sure if this is the right place to ask, but I am new to actual quality knives. What is a good knife for cutting up whole chickens? In the army I just used the chef knives, I see a lot of the higher end knives may chip cutting through bones. A little confused on what hardness would be right for it. Also would like a nice santoku as well...any recommendations would be appreciated.

    Burrfection Hi im new to whetstones. i got one about 4 or 5 days ago as a gift and i want to know if i should get some of those little rust erasers because i made a bit of a mess of my whetstone (its only a $30 whetstone) but still i want to take care of it. I never looked anything up when i first got it, just wanted to use it XD so i did do a little bit of damage to it. could one of those rust erasers level out my whet stone and make it good again? (i dont want to break the bank here)

    Sabitooru observations:
    1: You too have problems opening that package as I can see at the end of the video :D
    2: Should these be as soft as a hard eraser? From the video I had the impression that these are hard stones like the Naniwa rust eraser.
