OMO, leave the granite that frames the doorway and windows exposed and lime render all of the rest of the walls. There are plenty of features left to give the historic feel. I think the chandelier is a great fit.👍🏻👍🏻

I think keeping the plaster walls would be best for bedroom in this case as you have some lovely granite features on all the walls and beams on the ceiling. Seeing this room more fully, I wonder if a faux beam could be used to conceal the electric light fixture wiring beside the entry door and stain it to match the ceiling beams. Make this beam wide enough to conceal the granite to the right of the electrics too so that the granite appears to be cut around the faux beam. Just a thought. No need for exposing the rock/lime mortar walls in this case. Also, the bedding and curtains will likely soften the hard lines in the construction.
I'm on the side of no to exposing the stone. I think the stone is a lovely feature anyway (even if it was cut through). I also don't like feature walls. They look so 2000's. But if you end up doing it the wall the bed is on would be the best wall. It would look good with a big tapestry that went behind the bed and extended past on either side. Well that is if you can find one that big anyway

In our granite house in the Creuse, we had an exposed wall against which was the bed. Throughout the day and night granules of lime mortar would fall on us or the bed, despite the good condition of the masonry

I adore a stonewall or two but it’s going to be labour intensive. Perhaps see if you can match the stone where the channel is first. It would be a shame to do all that work and have the channel stand out like a scar. The chandelier fits the room beautifully 😊

The argument I see most often against leaving exposed stone is that over time, the lime mortar dries and gritty dust drops into the room. Not pleasant, in my opinion. Plus, it would not have been period appropriate to leave stone walls exposed. They would have been plastered and papered, then again it's not ye olden days anymore. Personally, I like the exposed granite around the doors and windows and the finished walls in between.

Everytime i see a wallpaper steamer i think of what we used. An old sheet quite wet with dish soap. Stick it up on the wall and it softend up the glue
