    OH MAN!!! This Mississippi boy loves your style and your expertise. I've got a big pot of greens simmering on the stove, and I came to TH-cam to see if I could come across a couple ideas about cornbread, although I've been making it for 35 years. I've learned you can pick up little tips here and there that make standard recipes better. Thank you SO much for this video. I'm about to get off my butt and make some crackling cornbread to go with those greens and ham hocks!

    My granny always made cracklin cornbread and when I mention it in my home today. Nobody seems to know what I'm talking about. Thanks for showing this delicious southern recipe. It's been so many years since I watched granny do it that I didn't remember exactly how it was made except I did remember it was fresh cracklins and not like the ones sold as chips in a bag

    I watched several videos on how to make cracklin bread, but yours was.the first that understood what cracklins really are After a hog killing the fat that was trimmed from the meat would be rendered down in a cast iron wash kettle over a fire. After tbe oil was poured off what remained in the pot were crackins. Thank You!

      Thank you for stopping by and sharing. I watched some videos of people using pork skins instead, so I definitely wanted to distinguish for people who don't know any different. Now thanks to you, I know the difference in the preparation of the two. But, seeing your comment about a hog killing instantly takes me back to childhood, seeing the whole hog roasting over the pit as my mouth is watering even now.🍽️

    True southern cooking. I loved your demonstration. I was looking for cooking the fat after skinning the hog. I remember making lye soap. Wasn't the greatest butt it's probably safer that chemicals the use today. Get some turnip greens to go with that!!! ( Lamar ) Central FL. ( Flat rock,Ala.)

    Thank you for sharing your recipe!!!! I am starting to learn to make cornbread and I enjoy seeing how everyone has their own regional favorites. Here in Arizona we use a yellow meal and add small veggies (peas, carrots and corn) and freshly diced hot peppers. It's almost a meal unto itself!!!!! Now I am thinking of adding a dash of Chicharrones (cracklin') for a wee bit of crunch!!!!

    Unfortunately my grandma never made craklin cornbread for us growing up, so I don't know what it should taste like correctly made. I've tried to make it a couple times, but with no reference point to determine what is good or bad, I'm left to assume I've missed the mark. Should the craklin be chewy when finished?

    I need to get to this level of cooking, no measuring cups at all.

    • @freddycooks
      @freddycooks  9 หลายเดือนก่อน

      It's okay.. Use the measuring cups and utensils. It does take time, but one suggestion that will help is, find 1 or 2 recipes of something you really like to make that requires specific measurements, like box cake, brownies, or even cookie or cornbread recipes from scratch. Use the measuring cups, etc, but pay close attention to how much your putting in and pouring out of the measuring tool. The more you see how much an actual cup, teaspoon, 1/4 cup, etc, etc is, the more you'll be able to do it from muscle memory.. you can even practice pouring a certain amount of flour from one bowl to another without measuring, then checking yourself with the measuring utensil to see how accurate you are once you think you have a grasp on what a certain amount looks like and feels like... but if all else fails, use your tools. That's why they make them, but Im confident that you will get it in time.. Thanks for watching😊

      @freddycooks  ปีที่แล้ว +1

      Thank you for stopping by. Finding the right kind can be a little tricky because most markets just have regular pork rinds or pork skins. That is not what we need for this recipe. It depends on your location, but I got mine from Piggly Wiggly. They are usually in the meat section in select locations. You may want to try a specialty quality meat market. If all else fails, you can order them from Walmart online. The name of the brand that I use is Lord's Country Style Pork cracklings. I checked the Walmart website, and they are $4.26 per 6oz bag. I hope this helps 🙏🏽

      Hi. You can find them at stores like Winn Dixie or Piggly Wiggly. Walmart supercenter probably will not have them. Publix certainly won't have them, bit depending on your area, they may be hard to find. If you can find a store that sells pig feet and chitterlings, then they'll probably also sell cracklin. Otherwise, you'll have to order from online. Thanks for watching!🙏🏾

      Interesting. No. I never heat the pan. That's something new to me. What does that do?

      The National Vital Statistics Report lists Hawaii with the highest life expectancy at 81y/o and West Virginia with the lowest at 74y/o. However, my great grandmother lived to be 93. Her daughter, my grandmother is currently 78 and was taken off her blood pressure medication 5 years ago, and my grandfather still drives, mobile and active. He will be 94 in Jan if it's the Lord's will. Nevertheless, many people across all regions and countries reach their unexpected ends before the age 60 and none of us are promised tomorrow. So, it's most important to live a repentant life that's pleasing to God, accepting our salvation through Yeshua, loving our neighbors as we do ourselves while we are alive or it won't matter how long we live on earth if we die and spend eternity separated from our creator and find ourselves in eternal darkness. Be blessed and be a blessing to some one else my friend. 💌😉🕊
