Great recipe. Fatties are one of my favorites. We've made everything from breakfast fatty to seafood fatty. Love this channel. May I ask why you don't make your own rubs?
My input: Use a tangier cheese like Swiss or skip it altogether. It needs a layer of caramelized onions. Splurge on the higher end bacon like Applewood smoked or Black Forest style. Use a smoky Kansas City style BBQ sauce like Curley's smoky or a Bourbon BBQ sauce. Chipotle and chili spices don't belong in BBQ sauce, same with Worcestershire sauce and tamarind. Use a sweet smoking wood like pecan, apple or cherry. Mesquite and hickory are harsh and can make meat taste like the smell of the automobile tire section at Costco. Baste the outside with a sweet Bourbon glaze.
thanks for the tips on the production of this "bomb", liked the use of zip lock bag and the saran wrap. I did it and I had a hell of a time keeping it all together, you did a much better job of making it come together. what kind of smoke did you put on the recipe? hickory, apple, ?
Well, we have made our fair share of sausage fatties, so don't worry if it didn't hold together super well the first time. One quick tip is to make sure the sausage isn't too warm as it will fall apart easier. This was a 50/50 mix of cherry and pecan. Thanks for watching!
love me some bacon explosion.....its bacon and sausage....i do mine with out bbq sauce...more breakfast style....i make a whisky maple syrup type sauce to put inside and out...awesome breakfast sandwiches
+Darkness EMP23 You could make this in the oven, you just want to make sure you contain all drippings from the bacon to keep your oven clean. A lipped baking pan lined with foil would be perfect. Thanks for watching!
MAKE BANGERS AND MASH!!!!!! you know thats a good idea bro... you know its good!!!! stuff sausage and smoke it... onions on an iron skillet on the grill.... roast some garlic and add it to some mash. now I'll wait to see how long it takes you to make this masterpiece.
I'm thinking of trying a Philly Cheese Steak Bacon Bomb. Has anyone ever tried that. Basically, it would be shaved ribeye with American cheese, peppers & onions wrapped in the bacon lattice shell. Not sure how it could suck.

are you using a high temperature cheese? when I make these I have issues with the cheese melting away.
We are not, just a simple shredded cheese. One reason we use 8 oz. of cheese is so that as it melts it doesn't expand too much and leak out.
