I have a few questions but I’m not sure if you have the time to reply. Can I ask about cotton sponge cake? What do you think about making it into a wedding tiered cake (3 tiers, not that big tiers, like 10”, 8”, 6”) cake with fillings and fruit in the middle? Do you think it’s too delicate to support the weight of course using plenty of wide dowels. Because it’s such a lovely sponge I was wondering. 😊
I’m definitely going to make these. My family loves lemon bars! Suggestions: crumple up the parchment paper, then flatten it out, before putting it in the pan. I’ve also seen where people wet it and wring it out, but I haven’t tried that. I like to crack the eggs in a ramekin one at a time before adding to the rest of the ingredients. That way no shells or bad eggs will ruin the mixture. Would pouring the lemon liquid over the baked cookie crust while it’s resting on the pulled out oven rack be ok? I’d be so fearful of spilling it if I had to move that much liquid from countertop to oven. Thank you for the tip on straining out the lemon zest. I’m not a fan.

Otherwise i have tried your 3 - 4 recipes just replace the eggs with yoghurt and even then it was loved by customers.Thank you for sharing and doing such incredible hard work. I know what it takes. Once i heard you saying that you have some health issues , i hope and pray you will recover from it soon. I also suffered some serious health issues and couldn't recover from it completely. But still doing whatever little i can do,m happy and thankful. Lots of love and blessings from my side.you inspire me alot.😘😘🙌🙌

Hi there! :) I haven't tried using margarine myself, but butter will provide a better taste but also may be better for the structure of the crust as margarine might not set as well :)

I use my regular lemon curd recipe with a couple of tablespoons of flour mixed into it. Turns out perfect

If you grease the pan first, the parchment will lay better.
