    Tried this recipe out the same day it was posted. It was a huge hit. Texture, flavour of wheat and the firm and yet sponginess of the bread was loved by the family! Definitely must try

    That was a good one. I always thought that making bread was a time taking exercise and shied away from that. Followed the recipe exactly and within an hour the wholesome wheat bread was ready. I think the jeera added a fantastic flavour and a crunchy side to tier otherwise soft bread. Keep the recipes coming. Kudos to the channel.

    That was nice. Thank you for your recipe 😊👍 I have a doubt here. You used aluminium (hope so) vessel for making or baking the bread. I red an article about the use of aluminium that it is not an eco friendly option and we are supposed not to use for cooking purpose. Please share your thoughts on this.

      Namaskarams and thanks for your response. Yes,you are absolutely right in saying that Aluminium is not safe to use. I have stopped using aluminium vessels for cooking. Used the aluminium kadai as base for baking. Cooking is done in iron or steel kadai!!!
      Regarding baking pan, this was bought recently. Probably coated with some nonstick coating,which of course is not safe!!!! Have to try glass or steel to be used in the oven.Will definitely try it.

      Have been wanting to try baking bread with millet. Have yet to try. You could definitely try with 50 percent wheat flour and 50 percent of ragi flour. I was planning to try it one of these days!!!! Would love your feedback,if you happen to try before me!!!!

      @@munchandmull Return Namaskarams from here. Sure will. Baking with Non-wheat flours is important for 2 reasons . Norman Borlaugh who scientifically made us grow more wheat also changed the genetic structure and the wheat used now (whole or otherwise) isnt the same our ancestors used for roti or Bread. And for that "Maida" is the adhesive in the gut the study "wheat Belly" by William Davis nails it after a study. . In other words.. Wheat sourced from traditional non GMO sources and bread from variety of flours is the way forward... u can address me without Ji . nanri

      Yes, the way ahead is to start experimenting with millet flours,which I am going to!!!!

    Nice message and very useful video. Didn't know we could make it so easily without oven.Can we make cakes also same way or do we need cooker? Also, any Kadai or only iron or only alloy Kadai?I have heard that Alloxan may be present in many commercial wheat powders. Is that true?

      Thanks Remya for your encouraging response. Yes,cakes could also be baked. Basically the vessel in which you are baking should snugly fit inside a kadai or cooker. I used kadai, because my baking tray would not fit into the cooker!!!! You could use either salt or sand inside the cooker or kadai. Any alloy, metal kadai could be used. Regarding Alloxan in commercial wheat flour,will have to check,as I source by wheat flour from Biobasics,who in turn source it from an organic farmer!!!! Regards Sujata from Munch and Mull

      There are various ways to make multi grain flour at home. I generally buy authentic organic flours from Biobasics,Coimbatore,and mix one cup of ragi or nachani flour, half cup of jowar flour with two cups of wheat flour to make multi grain flour rotis!!! Alternatively,one can also mix quantities of your choice of grains like say,a mix of 50 percent wheat and the other 50 percent a mix of equal quantity of nachani, jowar, soyabean etc and grind it at home,if one has a dry flour grinding machine at home. Alternatively,one can get it ground in the chakki shop!! The multigrains to add,is completely left to your creativity. More the merrier and healthier😊😊😊. I hope I have answered your query.       This bread was made during 2020 lockdown,and so shops being closed,had no access to Yeast. Bread made with active yeast,is much softer.

    There are so many brands of whole wheat flour nowadays - any particular kind you would recommend?

      I source my organic whole wheat flour from Bio Basics here at Coimbatore which in turn source it from an organic farmer 😊😊😊. You can order Bio Basics products online.
      In India, generally brands like Ashirwad,Pilsbury etc are well-known. But do not know how much of actual wheat flour is there in them!!!! So I would say,go by your experience and feel. Whole wheat flour dough that is not sticky and has a good feel, when you make chapati!!!!! Does this input help??? 😊😊. Regards Sujata from Munch and Mull

Regarding your query, you could definitely substitute yeast instead of baking powder and baking soda.For the same amount of flour,say two cups,you could take a teaspoon of dry yeast and mix in half a glass of warm water with half a teaspoon of Jaggery powder. I don't use white sugar 😊😊. Keep this glass covered in a warm water bath for about 20 minutes. After 20 minutes add this yeast mixture to.the flour and follow the same procedure as given in the video. Let the prepared flour be kept for half hour before kneading it again and then baking.
      Do share your experience post baking. You could omit buttermilk also if you wish and substitute by water.

    Dear Sujata, how much yeast would l have to use in this recipe, instead of baking powder and baking soda? I prefer using yeast to make bread cause it gives the bread a better rise.

      Namaste Chandrakanthji.
      Yes one can use yeast and avoid using baking powder, baking soda,curd and butter milk. One teaspoon of yeast to be mixed with quarter to half glass of warm water with a teaspoon of Jaggery powder. Keep it in a warm water bath for about 20 minutes. Add this risen yeast to the dough. Salt plus water. Mix. Keep the dough covered for about 20 minutes. Knead again and then bake. Regards Sujata from Munch and Mull

      Namaskaram Jyoti. Missed your responses to recent videos 😊😊😊. Baking soda and baking powder are basically chemical leavening agents, used in baking for flour to rise.
      Chemically, baking soda is sodium bicarbonate. Baking powder contains baking soda and other ingredients.
      Using these,once in a while is ok.
      I prefer to use biological yeast for bread etc. This video used baking powder ,as I ran out of yeast.
      For cakes,I do use baking powder.
      As I reiterate, using these,once in a while is fine. I have yet to try baking a cake with yeast. Will definitely try it out.
      Our exposure to chemicals start from day break until night,in terms of soaps, toothpaste, preservatives in processed food , cleaning agents etc.Choosing the lesser evil and opting for healthier alternatives is definitely in our hands.😊😊😊😊. Thanks and regards Sujata from Munch and Mull 🙏🙏

    How do I bake it in the cooker I don't hv oven

      Namaskarams. You can definitely bake it in the cooker. Put a layer of dry sand or salt,s thick layer of about one cm height.
      On top of salt or sand keep a metal tripod stand or a inverted steel flat vessel. On top of this inverted vessel,keep your baking vessel with batter in it.😊😊😊🙏🙏. Preheat with sand or salt for atleast 15 minutes. After preheating keep the baking vessel
      Close with cooker lid. Do not put whistle.
      Heat with baking vessel for about 10 minutes in high and then lower flame to sim for next 15 minutes. Check after about half hour by pricking with a needle or knife. Batter should not stick. Thanks and regards Sujata from Munch and Mull.

      Namaskarams. Generally use yeast for baking bread. As it was shot during lockdown, had run out of yeast and so used baking powder and baking soda.

      Namaste. For 2 cups of flour,approx for 200 GM's flour,use one teaspoon yeast. Mix yeast with 25 ml warm water and a spoon of jaggery powder. Once it rises mix with flour and add additional warm water to knead the flour. Keep kneaded flour aside for 45 minutes and then bake. Regards Sujata from Munch and Mull 🙏

      @@munchandmull mam,the research papers you mentioned are of low quality. If you look at any international research papers/icmr it shows that there is no use of alloxan in white flour/maida,only that there is production of very minute presence of alloxan due to natural bleaching of sunlight.
      No food is just good or bad (except probably dalda/partially hydrogenated fat) ,yes it is true that whole grains should form a good part of your diet and yes, we shouldnt consume too much refined flour(due to loss of thiamin and other b vitamins,some minerals like iron and magnesium ,fibre, antioxidants etc) but they shouldn't be demonized. If you at japanese population they consume mostly white rice or white flour(both fortified) but are one of the most (2nd) healthiest people in the world because their overall diet is good (lot of fish,tofu/soybean,veggies,fruits etc).
