Trinidadian RED BEAN PELAU Recipe

- Hi Lovelies! It's great to be back! Hope you enjoy my recipe for Red Bean Pelau!
INGREDIENTS:
1 whole chicken, cleaned and cut up
4 cups of parboiled rice
1 cup of dry red beans, soaked overnight & pre-boiled or 2 cans
1 can of coconut milk or the milk from a dry coconut
1 cup of green seasoning (chadon beni/bandhania/culantro + cilantro + garlic) - *you can add pimento & hot peppers also
1 cup of chopped sweet peppers
1.5 cups of chopped carrots
A bunch of thyme
1 onion
10-12 cloves of garlic
*Hot pepper
2 stalks of celery
3-5 stalks of chive/scallion
*1 cup of pumpkin
2 tablespoons of salt (season the chicken and the pot)
Black pepper
2 tablespoons of soy sauce (or as much as you need to attain the color you want)
5 tablespoons of brown sugar
1 tablespoon of Avocado oil
*finish with your choice of butter or salted margarine

Thank you, this is my go to meal to prepare since i make enough to last at least 3 days in addition to my other sandwiches and lunches it's nice to have a filling plate of palau!

Question how do you eat it the next day? Since you like the pealu wet....Only asking because all the liquid would have dried up once it goes into the fridge.
