Max, this place truly a national treasure, I grew up in Saigon and noodle carts like this came out on the streets of central Saigon at night (before 75’) and the taste was so uniquely Chinese-Vietnamese noodles that there is no way on earth that you can find this taste anywhere but Chợ Lớn, VN. I hope you know that I will dream of eating this every night from this day on, this is how much I love this noodle bowl! ❤

Wow! This place reminded me of my mom. She used to take my sisters and I to go to Cho Lon for this noodle. The way they make noodles is exactly the same way many yearssss ago. The chewy of the noodles is so different because they use duck eggs (thanks to Max) because I didn’t know that! The look of the shop is still the same. For sure I will come there next time I’m in VN. Traditional wonton noodles are made and beaten with a long bamboo stick to increase the gluten (chewiness) of the noodle. With that said, even in HK today, it is a lost art as it's made with machines. So I am not surprised that he uses a machine to make it in Vietnam. The wonton noodle served here differs significantly from the Guangdong version, though. The toppings are completely different.

I love a good bowl of egg noodle soups, quanzhou, Hong Kong, Cantonese styles. I like Taiwanese style noodle too, but prefer the thin egg noodles when done right.😋😋 yum!

Max! Satay 沙茶醬 is from TeoZhou Canton China, but popular in Singapore & Malaysia, make with Dry shrimp, dry scalloped and cashew nut and some spicies ingredients. But this stir fry hot chili oil sauce, Vietnamese like to all call ỚT SA TẾ, different then Satay Sauce, more like simple version for hot chili sauce.
Bao's referring to shacha sauce (sha cha jiang) in Taiwan which is an iteration of satay sauce in Southeast Asia developed by the Teochew people who worked there & brought to Taiwan post civil war.

Is the eatery located in district 1? I"ll be in Ho Chi Minh city in 2 weeks 2024 Martin Luther King day. Haven't tasted hu tieu for half a century since Leaving Saigon in 1975. You notice Max there are plenty of pho restaurants in the United states but no hu tieu eatery.

This noodle shop is great, a local brought me here when i first came to HCM in 2018, best place for some old school authentic wonton noodles

I'm Cantonese, usually, the old Cantonese people don't speak Vietnamese very well, so sometimes Chú doesn't understand what Max is saying
