Thank you! I noticed there were very few people on the web trying out mixed nuts to make nut butter. the flavors mix so well. I think Pecans would be a nice mix as well.
I haven't purchased a jar of peanut butter or almond butter since I began making it in the Vitamix. There's nothing fresher than this! Thanks for watching and I truly appreciate you supporting me! 😍
Henry, I make almond butter every couple of weeks. I use raw almonds, nothing else. I process for 6 minutes at top speed (using the tamper). Turn off the machine. (I actually pull the plug to let the motor cool down. I leave the nuts (which are merely a paste at this point) in the container. An hour or two later, I plug the machine back in, and process the nuts for an additional 6 minutes and the almond paste becomes a luscious smooth butter. I don't know why this works, but it does -- every time. No oil, no roasting, just raw almonds.
To be honest 6 minutes of blending almonds is way too long. Then to continue processing more after a few hours is completely destroying the nutrients. Nut butters shouldn't take more than 2 minutes max. Once you start seeing a lot of steam the nutrients are destroyed. That's great if you're satisfied but it's not recommended.
Indeed, the raw nuts are 'way past raw. Perhaps more importantly (we eat denatured foods all the time and survive), it's bad for the motor AND the container. Hot (not warm) nut butter isn't like hot soup--deformation of the container can occur, plus hot nut butter can be dangerous to handle.

hi Henry, daft question, but do we need to let the nuts cool down after roasting or just chuck them in the blender ? I have avoided running my Vitamix on the highest setting because of the scary noise factor but I'm going to brave it. This recipe is worth it !
Hi pi have to let them fully cool down. Also it’s imperative that you run your Vitamix on full speed when making smoothies and nut butters. You will over heat the motor if you run it on a slower speed. Slower speeds are for mixing and chopping.

Hi Michele! Presets are fine as long as they work with the recipe you're creating. The misconception about presets is some tend to think they will always work, but they don't. Presets have no idea what you're blending so it can be a hit or miss depending on the recipe and the amount of ingredients. Thanks for watching. 🙏🏾😊

Wet Container. The nuts need to be pulled downwards towards the blades to liquify them. Same as when liquifying ingredients for a smoothie. The dry container is for creating powder so it works in the reverse fashion. Thanks for your awesome feedback and for watching. 🙏🏾😍

You may use any type of nuts salted or even honey roasted. I generally recommend not using any salted nuts so you can stir in the salt later and control the flavor. Stores up to 3 weeks.
The Cashews can be made into a butter raw and no added oil. If you want to bring more flavor into the butter then you can roast them, but it's not necessary.
Hi Pardis! If you're buying a bag of raw mixed nuts (with cashews) there's no need to portion them out but if you're going to buy a bag of raw almonds, in order to avoid adding extra oil then do an equal portion of cashews to the almonds. Cashews provide the oil necessary.
Everything but the chia seeds since they expand once hydrated and they may make it harder for the blender to churn the nut butter. Same reason why it's not a good idea to add honey or any type of sugar during blending.

It will be challenging trying to create the nut butter in the Nutri Bullet. It requires a lot of power to churn nut butter and the proper blade system to make smooth butter.
@@BlendingWithHenry thanks for the reply! Believe it or not, I actually figured it out already this morning. Not super creamy, but perfect enough for me. Start by adding the right amount of mixed nuts (roughly 2/3 of large cup), starting with the milling blade to get the nuts ground up, and then move on to the extractor blade to make them more smooth and creamy. It does require me to open and readjust the nut butter mix to really get a decent consistency. I also made sure my mix had more cashews, thanks to this video! I'm proud I was able to take my 10 year old, $80 blender and make some GREAT nut butter. No need for the $500 machine. I'm single, living a simple life, less appliances is always good 😊
In the video it's very warm so it appears more liquid in texture. Once refrigerated it gets firm like store-bought peanut butter. If you want it thicker then use less of the cashews. That's what puts more oils into the butter.
Question: You said don't over blend because the heat will kill the nutrients...but then with that logic aren't you killing the nutrients when you roast them in the oven? What's the difference?
Because when roasting the nuts they are still whole. When you blend them into a butter they are being processed. The same thing when you store nuts in your pantry, they last for months to a year without issue. Once you process them into a butter they will go rancid in a month, even when stored in the refrigerator.
@@BlendingWithHenry Do you actually have evidence on it being rancid if you over blend? Because homemade peanut butter doesnt go rancid for six months in the pantry even if you over blend, so does that mean other nuts react differently than peanuts?
Hi Helen! No, you may purchase nuts from any store that already roasted and it's only a preference to buy them salted or unsalted. The difference in buying them raw is you can control how much to roast them. Often factories don't roast nuts long enough to bring the natural oils out. Roasting them yourself on top of this may result in the nuts being over-cooked. Buying them unsalted is the same as buying unsalted butter for baking. It gives you full control on how you season them.
Pre-roasting isn't the same as processing the nuts. For example you can buy nuts roasted in the bag with zero preservatives and they will last months before going rancid. Once you process them into nut butter they only have a 3 week life and require refrigeration.
@@BlendingWithHenry Ok, that addresses how long the products will last before going bad, but not the possible nutritional loss of both pre-roasting and heating too much during making nut butter. I'm just saying that if the latter destroys some nutrient content, then so too should pre-roasting.
I tried this, and everything clumped under and around the blades. Then the blades spun without hitting anything. I'm guessing it is because I didn't use enough nuts.
Make sure you're using at least 3 cups of roasted mixed nuts (which includes cashews) in the 48oz container and 4 cups of nuts with the 64oz container. Anything less will result in the experience you had.
Works the same way. No special recipe. Just dump the mixed nuts (4 cups for your 64oz container) press start and quickly increase the speed dial to the highest speed 10.
Hi Elizabeth! If you have the Vitamix 64oz tall container you can use 3 or 4 cups since it's narrow. If you have the Vitamix 64oz low profile wide container then I would use 4 cups minimum just to make sure the blades are fully covered by the nuts and the tamper can reach low enough to press the nuts into the blades. While 3 cups "works" for the 64oz wide container 4 cups is better for efficiency. 🙏🏾

Pumpkin and Sunflower yes, but I don't think Watermelon seeds can be churned into a nut butter or even mixed in.

I haven't tried that. It's about the natural oils in the nuts. Processed flour may have different results.

Drop a spoonful of avocado oil itll help give it that extra power.

Pan roasting will perhaps brown them long before the natural oils are brought out. They need to be heated inside out.
