10/14/23: Hey Tammy. Your pork turned out wonderful, looks juicy and full of flavor. I LOVED your presentation and especially how clean you are with your meat. I'm the same way. I've got my pork loins waiting for me to put the whammy on it today with your recipe and I'm excited. You sound very east coast. I'm from The Bronx/Brooklyn myself, so I picked up on your accent. Hope I'm not wrong. Thanks for sharing! I'll let you know how it turned out. EDIT (4/29/24): I made this bad boy, and OMG, it came out wonderful, tender, juicy and packed with flavor! In fact, I've made it twice since last year and plan on making another for the Memorial Day holiday, party of 30! For me to put something out there for a party this large, you know it's GOT to be good! 😋 Thanks again.
Oh my great video Tammy. Absolutely love Pork Tenderloin I haven't made it n a while but I will definitely give this a try. Please keep the videos coming love love ur channel u r a cooking god!! 😉
I made this today, and just finished eating it as my dinner. It was incredible! So juicy! Great combination of seasonings, and that juice left over at the end was life changing. Thanks for sharing this with us, I will 100% be making this again.
You are awesome, my family enjoyed my food before, but now they think it's off the chain. Thank you keep the good work up. cooking with Tammy it's the show to watch.
This recipe is amazing. I made it but as I didn’t have the paprika I used chipotle roasted garlic. The meat was so tender, melting in the mouth. Loved your recipe Tammy. Thank you!
Yes the chipotle roasted garlic is a great substitute for the paprika. I’m so glad u enjoyed this recipe. Thank u so much for your feedback. I really appreciate it Paula!!!🤗
This is what we are having for dinner tonight with mash potatoes 🥔 and green beans!! Smithfield is the best brand to buy! Great prices. I grab two when our local grocery store has them on sale.
Made your dush tonight and it was absolutely delishes. I did not have any rosemary but it turned out great without it. Thanks for sharing this recipe. My family appreciated it!!
Ok.... really rather tasty....though I would cut back on some of the salt ....surved it with a mix of White and Brown Jasmine rice and Coliflower.....👍🏻
This is the best pork tenderloin we have ever made. Completely tender. Plentiful au jus. Treated dear friends who just lost their Mother to this with scalloped potatoes. They raved. The aluminum foil really made a difference.
I've got a question and a couple comments: Why do you put salt and lemon on it and then rinse it off? The purpose of brine is to force water to go into the meat, which keeps it from drying out and getting tough when it's baking. It takes 2.5 - 3 hours for the brine to work, 20 mins doesn't do anything. It's important to rinse brine off because if you don't, it will be too salty. Sealing it up in foil keeps it from drying out, but it destroys the crust from searing. So if you're going to sear it and create that caramelized crust, you brine it first to force extra moisture in to keep it juicy and tender. If you're going to seal it up, the foil will keep the moisture from escaping so you don't need to brine it, and there's no point in searing it because the steam inside the foil packet will dissolve the crust.
Then why are you here friend? "There's no point" in your questions or comments if you've got all the answers. That was disingenuous. Just make your own video🤷🏽♀️
I watched your video, I seared mine, then I put big dabs of butter on top and wrapped it in foil. Put it on my grill for about 35 minutes and it came out excellent. Thank you for your session
I got everything to make this sometime this week. Also going to make your cajun chicken tenders. I made your southern cabbage and sausage and it was so good!
I made Tammy's Southern cabbage and sausage 2 weekends in a row. It was THAT good!! 😋 I was all set to make it for a 3rd time but I forgot the head of cabbage. Ugh, I was so angry at myself. Since I couldn't make it I did the next best thing. I doubled up on every ingredient then placed all of that goodness into flour tortillas. I missed the cabbage but I gotta say. Those were some tasty tacos/burritos, lol. I've never used shallots before but now? Tammy's got me experimenting... 😄
My tenderloins are searing up nicely rn and I cannot wait to taste it, it already smells devine, thank you for this! ❤ Ps. I'll be serving this tonight with mashed potatoes and cream corn. 😊
Tammy, I must admit, I've tried other pork loin recipes, BUT!!!!!, you've blew the doors off the others on TH-cam!!!! I made this along w/dressing and all was left to do was give the benediction!!!!😂😂😂

Looks good Tammy, but two things: (1) it seems U negated the purpose of searing it by wrapping it in foil, and (2) the shiny side of the foil reflects heat, therefore the meat should be inside the shiny part and the dull side should be external. Hope this helps.
I was always taught that you brown the meat first before you put on your rub or seasonings because during the Browning process it will burn the rub and seasonings and cause it to be bitter.... I am too and I used to but science has taught me different. The kind of bacteria/worm that is on meat cannot be killed by using salt/lemon/vinegar. If anything you are more likely to cause food poisoning if the cleaning water splashes on kitchen surfaces. The only way to kill them safely is heat. You can clean for your own "ritual" purposes, but health-wise, it does absolutely nothing.

More than perfect. Tender with a lot of juice.

It was a completely unnecessary step considering she was marinating the pork in vinegar and salt.

If your pork is dry then it's most likely overcooked. Pork does not need to be well done. You want to pull it around 145 at most.

Looks delicious, will definitely try. I'll have to take the silver skin off, for some reason It bothers me when I cook loin or ribs 🤔
I also trim the silver skin and fat
That looks so good. I can’t wait to make it tomorrow. Thank you for this wonderful video.
This was super delicious thanks for sharing all your recipes
You didn’t remove the silver skin from the pork tenderloin. It does not get tender during cooking. It becomes chewy.
Just discovering you & glad I did! Your recipes look amazing! I have a loin in my freezer taking up room!😊 Nice job.
Hey Tammy! I’m going to try this next week for my Sunday dinner! Looks delicious!! Thanks for sharing!! ❤️🤤

I always wash meat too before preparing.
I wash it to remove residue a butcher may have left on it.
