    You don’t have to reduce to increase flavor when you’re adding the very water that you’re reducing for flavor to begin with. A good reason for heating the mustard paste is to truly blend the seasonings and salt with the vinegar and mustard powder. If you want it thicker you can certainly just add less water or begin with. What you should do is add the vinegar first, heat the ingredients to mix well, and then add water if necessary depending on the consistency you want.

    I can't eat vinegar and need to substitute lemon juice. I know lemon is twice as acidic as vinegar. Do you recommend using 1/2 the amount of lemon juice as you use vinegar or same amount?

    • @COOKTOPIACOOKING-0202
      @COOKTOPIACOOKING-0202  ปีที่แล้ว +1

      Lemon juice contains percentage 6% and vinegar such balsamic, red wine vinegqr also have similar percentage 6 -7% also using white wine vinegar higher than any of them. I would love to suggest try to find or go with milder vinegar, try rice wine vinegar maybe since its only contains 4% acid
