HOW TO MAKE GEM ROYAL ICING COOKIES | COOKTOPIA
Are you looking for the cute small little cookies that has sugar on the top looks like a gem? If yes, here is the recipe and i called it gem royal icing cookies / gem royal icing biscuits cookies.
this small cookies decorated with sweet and colorful icing looks like gem as we called them gem cookies, for those who grew up in Asia you guys must be familiar with this gem biscuits and basically, making this biscuits cookies is similar as we make a buttercream frosting sugar cookies, we have to prepared 2 parts of dough which is the toping icing and dough for the biscuits itself but unlike buttercream cookies, this dough no need to chill before use, shaped it at anytime as soon as possible when the dough is ready
List of ingredients :
1.) Royal icing
1 white egg (egg yolk use it for later)
1tsp vanilla extract
2cups Caster sugar / Powder sugar
food coloring
2.) Cookie dough
1,1/2 stick Butter
1tsp vanilla extract
1tsp baking powder
2 cups multi purpose flour
3 tbs milk powder
1 egg yolk ( from 1.)
pinch of salt for taste
First I will prepare to make royal icing for the topping then will prepare the dough afterwards, for the royal icing I use 1 white large egg, the yolk already separated and keep it aside we will use it later
continue adding vanilla extract and sugar powder and we will using hand mixer with medium speed then slowly adding sugar powder keep mixing until we get the stiff form and make sure it looks spiky and shiny as the end of the result.
Divide the plain royal icing onto small disposable bowl or something else, to mixing the icing with the food coloring and turning them into colorful royal icing as much as color variety you wish to, I only divided to 4 colors, transfer each color onto pipping bag to make it easier putting them aside in the refrigerator until it’s ready to be use.
Now the second parts let make the cookie dough for the biscuits,
started with 1 stick of unsalted butter plus 4 tbsp of Crisco, I am not so sure why I’m doing this today, but I hope it’s not a violation on baking formula recipe or make it less delicious for the taste, and if you have done this before? please let me on the comment down below how was yours result turns in to.
Continue with adding the vanilla extract, sugar powder beat with medium speed then add 1 large egg then beat them all together again until the color is pale then start shifting the dry ingredients into it (flour, milk powder, powder sugar, baking powder and salt for taste) then slightly folding using the wooden spatula / spatula until the dough is ready and I still not forget that I have to add of the egg yolk that I already mentioned it before.
so instead of using bare hands grab the gloves, lets start make a little round shape and i am using the scale to measure all little rounds dough for about 5gr each one so they can have same size evenly,
To create the cutes side lines simply just using fork repeat the whole same process.
After we finished the shaped process, lets Get the baking sheet with the paper line ready
and bake them on the oven with 320 degrees Fahrenheit for Approximately 25 - 27 minutes or until the cookies golden brown, cooled after 25 mins before toping it
then after we topping it, all these cookies need to get back again in the oven with same temperature for about 5-7 mins or until the biscuits color golden brown, cool it down and let the gem icing set / harden by itself
