  • Anytime I see a post or rather comments on the post of jollof rice and people fighting over if Nigerian jollof rice is better tasting than Ghanaian rice and vice versa...I go just dey shake my head, dey say "na wa o people can take panadol for nonexisting headache o".what happens to different strokes for different folks?
    All I want is what excites the tastebud of my boys and I. If na "Ghanaian" jollof then Ghanaian jollof automatically qualify in my book as the best and vice versa, if it "Nigerian" own....abeg shey na only me waka come for this matter?

    Rice
    Meat stock (or water)
    Tomato base sauce:
    6 plum tomato
    2 red bell pepper
    1 or 2 Habanero pepper
    2 garlic cloves
    1inch ginger root
    170g tomato paste
    2 cooking spoon oil
    14.2g white pepper(1 sachet)
    6 pieces of bay leaves
    4 tablespoon margarine/butter
    1/2 Tablespoon curry
    1/2 Tablespoon turmeric
    I Tablespoon chicken bunion powder
    salt to taste
    ******Notes:
    1)The amount of rice you use is dependent on you. If you use the "little by little" cooking hack I showed in the video, this will not be a thing for you to calculate.
    2) The ratio of liquid to rice ratio is the same rule like we learned in my "how to make basic rice". For full detailed way of making that basic rice, check this video out:

    Jollof rice is truly something. I added chicken only to find out it is redundant. Somehow, this dish has all the flavors of chicken and of feisty lasagna without requiring meat, cheese or anything else besides the basic ingredients. It's a pure matter of spices. (I didn't use meat stock but rather vegetable stock).

      Thanks much. She feels happy that you understood her and will be so accomplished and fulfilled when you try it and get it😊..
      As for the choice of meat. It really depends on what you want..chicken,turkey,fish etc goes quite well with it... in nearest future she will be showing you detailed step by step how she makes each of them.
      For now, if you are using fish:
      1) Score it if it is the whole you using at once,
      2) sprinkle in your seasoning of choice..salt alone will work just fine if you want it very basic
      3) allow to rest for like 30mins
      4) preheat your oil (if frying) while this is resting (best if it is not the whole fish you using.i.e you have cut the fish into small sizes)
      5) then fry in your oil under moderate heat
      6)if whole, baste the sking with some oil to prevent drying out and grill on high for like 15min(check it at interval though because of difference of oven temperature) and the flip to the other side (if able) if not, cover with a foil and continue baking it..

      Did you cover the top with a foil first to trap the steam in before you placed the lid???

    Why can't we not use the first puree if we are going to add stock later?

      Great question😊. If I understand your question correctly, you are asking why we turned the paste into puree and not just use it as is.
      If that is the question here is my rationale for doing it like so:
      I will like to cook down the paste a bit to take out some of that canned tomato taste but if I just go ahead and add it like that I will need to turning and stirring it constantly cos it will burn. So on other to reduce the chance of it burning and me having to constantly stir i dilute it and allow it to fry and reduce. Also adding the stock helps to favor it and this also intensify the flavor cos it take time for flavor to build up in cooking generally.
      Having said that you can go ahead and not turn it into puree. But I will recommend you do this first before adding the pepper mix. That way you will still gain the benefit of flavor but then what you are doing is frying the tomato itself to release its flavor without the stock. Whatever works for you is fine. That is the beauty of cooking.

    I see the habanero pepper in the ingredient list but I don't see it in the video at all. Would you add that to the tomato and bell pepper puree?

      @@oliwiadziadkowiec6138 well you are in the right channel then. We learn together.
      I did use about 4 to 5 cups of rice . BUT the trick I was talking about is that when your sauce is ready, take out a small bit and then add in your rice bit by bit into the sauce in the pot until you get your desire level of "redness" or "orange color". This method is fool proof and will give you the idea of what your fin product will look like. It also solves the guessing job. If you need more sauce you add it in and or if you need more rice you add it in.
      If you have sauce left, you can always store it in the refrigerator and use it next time to make a small amount or for next big batch.
      I hope this makes sense. Please watch the video again and pay very close attention to when I was mixing in the rice into the sauce.

      Bridget Oppong for the flavor it adds. You can skip if you choose to but the buttery or margarine flavour takes it up a notch though
