Oh my. I bought a junk second hand smoker for $15 on marketplace. It needed wood I cut down from trees in my yard and a lot of babysitting to make sure the temperature was consistent. The next year I bought one of those expensive pellet smokers. Guess which made better tasting ribs? And even the cheaper pellets make better tasting burgers/chicken/sausage but nothing beats the taste of ribs made on that cheap, crappy smoker with small logs cut from my backyard. Wish you did grilling/smoking, but I get that it takes too much time and it's too hot where you are to sit at a grill/smoker.
If you ever do get into it, I'd be the first to watch your grilled/smoked jerk chicken recipe because I know you'd do it right. 😊
