I can just imagine what the rules would look like if Muay Thai was an Olympic sport.
*Only straight punches; no hooks or uppercuts or anything fancy.
*Elbows are allowed, just the referee stands the fighters apart after every one that lands.
*Points are only scored on kicks, and knees thrown from a standing position; no clinching.
    *

I think the problem is with Olympic comitee changing the sport/rules, and not with including a sport in the Olympics. Muay Thai could work if they keep it as it is. But Olympic comitee dosen't want that. So it's actualy the comitee that dosen't want Muay Thai (as it stands) in the olympics.
In my opinion there's too much sports in the Olympics anyway. To the point of Olympics actualy losing mush of their flair and uniqueness compared to other world cups. For instance - Basketball or Soccer - who even cares about olympic Soccer results? No one. FIFA is soccer's main event, where results matter. Soccer has it's own big event every 4 years that overshadows oylmpic soccer by a mile. Olympics are interesting for soccer fans sure ... but does anyone realy ... I mean realy care? I think there's no benefit of keeping it in the Olympics - it's just there to pad the events. Similar with basketball - the big events are NBA, Eurobasket and Basketball World Cup. No one care about olympics that much. Except if you are from a country where their team was out of the final due to last second score!
I think to remedy this, Olympics should focus more on athletic competitions. This would be FIFA for athletes - plus some sports to give a nod to Ancient Greek olympics. So I would include Boxing, MMA and equestrian events. MMA is modern version of Pankration ofc. - but also modernized for safety reasons - so UFC ruleset I think would work best, as it already achieves this.
Anything less, and it stops being MMA imo. Boxing also need to get rid of stupid helmets - olympic Boxing rules should be the same as normal modern Boxing rules.
But if they want to change rules of MMA or Boxing - they are better not to include them alltogether IMO. Athletic events are enough.
And winter olympics? Forget about it. Olympics today are just a waste of money more or less ... with countries less and less eager to host the event - some even hoping they wouldn't be picked.

The IOC requiring all combat sports to be distinct is really weird, when you think of all the extremely similar non-combat sports. We can't have two sports where people get punched in the head, or two sports that feature double leg takedowns, but there's freestyle, backstroke, breaststroke, and butterfly swimming, along with an event that requires each of those four swimming styles to be used in a single race (both in individual and relay categories), and a freestyle relay race.
And those are just the different *kinds* of race. They're all contested over multiple distances as well (six for freestyle; two for backstroke, breaststroke, butterfly, individual medley, and freestyle medley; and one for medley relay, which is contested as a mixed event as well as a men's and women's event).
It's not really that surprising the person that holds the all-time records for Olympic gold medals (23), Olympic gold medals in individual events (13), and Olympic medals in individual events (16) is a swimmer. How many athletes even get to compete in six different events, each with the possibility for a gold medal, in a single Olympics? I'd imagine most of them are runners. But if you're a wrestler? Pff, you're lucky if you can even somehow compete for both freestyle and Greco-Roman gold.

I agree with your reasoning for keeping Muay Thai out of the Olympics. But I still want to see Sambo get added. I’d love to see mainstream recognition of my favorite martial art.
On a side note, wrestling used to be very mainstream here in the 1970s and 80s because of pro wrestling in the southern states. What separated the likes of Vince McMahon from Jim Crockett was that Crockett’s promotion ran the southern half of the country. It wasn’t nearly as cartoonish as the McMahon family’s WWWF-turned-WWF. The southern wrestlers for the most part were very technically skilled wrestlers. Yes, they could brawl like the roughnecks many of them were, but they could also grapple quite proficiently. You didn’t see a lot of technical wrestling in the WWF back then. They had a few guys who could grapple with the best of them, but not nearly as many as you’d find down south.

Olympics want combat sports but without violence...
With wrestling or judo it's doable but with any kind of striking, it's stupid. You can spar light, but competing light seem weird to me....
Do everything you can to win, be the fastest, the more technical fighter but absolutely never hurt your opponent !
Throw the fastest head kick in the world, because head kicks give you more points, but pull it at the last moment and pray for your opponent to not lean into it, because he will get ko'd and you'll lose... How stupid is that ?

To a degree I believe the reason for Karate no knockout rule in competition is so that a whole tournament can be done in a day without competitors needing time to recover.
It has been known for some teams to take advantage of the meta and enter 6 or so competitors into a singles competition with the instruction to deliberately commit fouls and injure the biggest threats to their team's 'ringer' (not that they would likely publicly admit to it).
I actually think they would have been better using the Shobu-ippon (1 point to win) rules as while it is not as fast paced as other combat sports, it does make for a more distinct competition, as opposed to just another watered down kickboxing match.
