I made this last night. All I can say is that I don't think I was even living until I had this! Hubby was crazy about it too-so crazy that he said he wants this as his birthday dinner. I made it exactly as directed except that I used olive oil and butter instead of the other oils/fats. I also used sharp yellow cheddar because I didn't have white. Oh wow, people you have GOT to make this, it is to die for!!!!
Ms. Dot, I am going to start picking and using your meal ideas to stay fresh in Keto. I had a major slip for 3 days, and I felt horrible too, my stomach has been upset for days because I ate non - keto foods. I didn't prepare myself, and last week was very challenging too, so it showed, and I retreated back to some of my old ways. I have come so far in 2 months time, I refuse to go back to the way I ate before. It wild when you slip up, how you feel like you've committed a sin...crazy...but that's how I felt. Not only did my family LOVE this casserole, the cheese sauce is now my go-to recipe to serve over vegetables and as queso dip with veggies as a snack. I made this today and it is delicious. When I make it again, I will buy the veggies sliced and, if I can, even buy the beef already sliced. The recipe requires a lot of prep work and if there is one thing I hate, it's slicing and dicing. I also made way too much cheese sauce so the dish turned out rather soupy. I will cut down on the sauce.next time. This is one tasty dish. The recipe makes a lot, so after all the work, I'm going to enjoy serving after serving ....

Gail Blain Peterson that sounds great too! I make mine in a green pepper half. You just load up with the meat onion and place cheese on top..(everything is already cooked) then place in oven to melt the cheese.

It looks wonderful as all your recipes do. I might have to cut back on the amount of cheese a bit for too much does tend to bother me but I know my hubby would love this. I have my first painting class of 10 women coming up sat may 12,,so I'll let ya know which one of your recipes I'm going to make. Casseroles are some of the easiest and most favorite dishes to serve along with homemade soups. I will probably make one low carb dish and one regular for my ladies,same with dessert. Can't wait to give this a try!!! I've ordered Philly Cheesesteak and left off the roll, but I still hated the fact that they cooked up everything in canola oil... I've never used duck fat, but have heard great things about it.
I made this for lunch today, and it was pretty good. I will make it again, but with a couple of modifications. I will thin the sauce out a bit with a small amount of beef broth (the sauce as is was just a little too rich for our palates), and I will leave off the provolone topping.

I think I may try this by grilling the meat and veggies, then slicing it all and add everything to the casserole dish and cover with the cheese sauce. The one thing I learned about cooking keto is the less steps and dishes the easier it is for me to stick to it. But your end product looks yum!
Agreed, less is definitely easier to stick with. What I try to do is give a range (across my various vids) and hopefully people can find something they can live with, and maybe do something fancy once in a while. :)

I was going to make one from The Philly steak sheets (used to be steakums) since they are 100% beef but I decided not to make it since it would take too many. LOL I bet your hubby was drooling at the mouth to get dug in to that dish. Looks lovely and my man would love it. Can I ask if you eat any type of bread or would you say it was a no no when trying to lose weight.
In my normal day-to-day I eat practically no types of bread. Occasionally I experiment, or make something for others and then have a little (oopsie bread, for example). And of course I make stuff for the channel, and I eat that -- not bread, per se, but treats like the cheesecake. Husband: he ate 2 helpings (against my wishes) :)
Can this be fully put together and then frozen to make a weeknight dinner easier? nom nom....gonna make this and put a stripe of marinara on top after it's finished. For those can't drop $25 on two beautiful ribeyes you could definitely use SteakUms. That's the only brand I feel is worthy of a cheese steak and I've tried all the rest. I'm from the Philly area so cheese steaks were their own food group growing up :-)
All keto is low carb, but not all low carb is keto. Keto is generally eating 20g of carbs a day, or less. Above that would be 'moderate' low carb and then 'liberal' low carb. All are way better than pounding down a bowl of pasta and washing it down with a Coke (hehe). Welcome to the journey!
I'm new to Keto and recently discovered your channel. You present delicious and easy meals , which I appreciate. Special request - I don't drink coffee, but is there any chance someone has a similar bullet proof recipe for tea or hot chocolate drinkers? I'd love to be able to take advantage of the benefits of bullet proof, but I can't stand coffee!
Bullet tea is a real thing! You can pretty much use the bullet proof coffee recipe with tea. You may want to experiment with type of tea to see works the best for you. I've used green, black and oolong teas. So for 8 oz of hot tea, blend in 1 tbsp of coconut oil, 1 tbsp of butter and blend. You can also add 1 tsp. of MCT oil too (i usually reduce the coconut oil by 1 teaspoon if I use MCT). Some people may use coconut milk with coconut oil if they want to keep it dairy free.
2 questions, first can you freeze this in individual servings to eat later and second can you jar and freeze just the cheese sauce? Love the looks of this can not wait to do this. Going to make this post sleeve diet much better.
Yes you can freeze the sauce for later. Just thaw it in the refrigerator. As for freezing individual servings, you can, but I normally under cook the veggies a bit. I find they take to freezing better that way and won't disintegrate when you thaw/heat up. Let me know how it turns out for you.

Provolone or Swiss cheese ✅Directions 1. Place steaks in freezer bag and place in freezer for 30-45 minutes to make the steaks easier to cut into thin slices. 2. While steaks are freezing, begin shredding the cheddar and Parmesan cheese for the cheese sauce, and slicing your onion, peppers and mushrooms. 3. Remove steaks from freezer and slice into thin strips. Place in a bowl and season with sea salt and pepper. Set aside. 4. Preheat oven to 350; lightly grease a casserole dish and set aside. 5. If making cheese sauce, pour cream into small saucepan over medium low heat. Once cream is warm, add ¼ cup of cheese to the cream at a time, stirring until melted before adding in more cheese. Stir in butter and season with Himalayan salt and pepper. Turn off burner but keep pan on stovetop near the oven heat source to keep warm. Stir occasionally to prevent a thin skin forming on top of sauce. 6. In a large skillet, heat 1 tbsp. of ghee or beef tallow over high heat. Once fat is sizzling, working in batches, add in steak; cook for 1 minute on each side. Next, place meat on cutting board and chop into smaller, bite-size pieces; place steak in a large, clean mixing bowl and set aside. 7. Wipe the skillet clean with a paper cloth (careful as it is hot!) and heat ½ tbsp. of duck fat and 1 tbsp. of butter over medium heat until sizzling. Add in onions and stir to coat with the fat. Continue stirring until onions are soft; season with a pinch or 2 of kosher salt. Reduce heat to medium-low and continue to cook onions, stirring every 1-minute to prevent them from sticking or coloring too much. Onions are finished when blonde-colored, about 10 minutes. Place onions in bowl with steak. 8. Wipe skillet clean and heat 1 tbsp. of duck fat over medium heat until sizzling. Add in mushrooms, stirring to coat them with the fat; sprinkle a pinch of kosher salt over mushrooms. Stirring occasionally, until mushrooms release water. Turn heat to medium low and let water evaporate. Once water evaporates, cook mushrooms for 1-2 minutes more to brown. Place in bowl with steak and onions. 9. Next, heat 1 tbsp. of duck fat in skillet over medium heat until sizzling. Add in peppers, season with salt and, stirring occasionally, cook until softened. If desired, place peppers on cutting board and chop into small bite size pieces. Place in bowl with steak, onions and mushrooms. 10. Add cheese sauce to bowl and stir to combine all ingredients. Pour mixture into casserole dish. Top with chopped pepperoncini, if using, and provolone cheese. Bake until cheese has melted, about 10-15 minutes. After cheese has melted, you can broil for about 5 minutes to brown if desired.

This is right on time cause just a couple of weeks ago, I was on you tube and Pinterest looking for a Keto Philly steak & cheese casserole. I was going to make one from The Philly steak sheets (used to be steakums) since they are 100% beef but I decided not to make it since it would take too many. LOL I bet your hubby was drooling at the mouth to get dug in to that dish. Looks lovely and my man would love it. Can I ask if you eat any type of bread or would you say it was a no no when trying to lose weight.
In my normal day-to-day I eat practically no types of bread. Occasionally I experiment, or make something for others and then have a little (oopsie bread, for example). And of course I make stuff for the channel, and I eat that -- not bread, per se, but treats like the cheesecake.
Husband: he ate 2 helpings (against my wishes) :)
Can this be fully put together and then frozen to make a weeknight dinner easier? I have two kids, 3 & 5, and work full time, so I'm looking for keto recipes that I can put together on the weekend that will feed us for the week. Thanks!!! Love the videos and recipes. nom nom....gonna make this and put a stripe of marinara on top after it's finished. For those can't drop $25 on two beautiful ribeyes you could definitely use SteakUms. That's the only brand I feel is worthy of a cheese steak and I've tried all the rest. I'm from the Philly area so cheese steaks were their own food group growing up :-)

So do you do keto or just low carb? Or are those the same thing? I'm just looking into this journey and so far you have some really good recipes.
All keto is low carb, but not all low carb is keto. Keto is generally eating 20g of carbs a day, or less. Above that would be 'moderate' low carb and then 'liberal' low carb. All are way better than pounding down a bowl of pasta and washing it down with a Coke (hehe). Welcome to the journey!

I'm new to Keto and recently discovered your channel. You present delicious and easy meals , which I appreciate. Special request - I don't drink coffee, but is there any chance someone has a similar bullet proof recipe for tea or hot chocolate drinkers? I'd love to be able to take advantage of the benefits of bullet proof, but I can't stand coffee!
Bullet tea is a real thing! You can pretty much use the bullet proof coffee recipe with tea. You may want to experiment with type of tea to see works the best for you. I've used green, black and oolong teas. So for 8 oz of hot tea, blend in 1 tbsp of coconut oil, 1 tbsp of butter and blend. You can also add 1 tsp. of MCT oil too (i usually reduce the coconut oil by 1 teaspoon if I use MCT). Some people may use coconut milk with coconut oil if they want to keep it dairy free.

2 questions, first can you freeze this in individual servings to eat later and second can you jar and freeze just the cheese sauce? Love the looks of this can not wait to do this. Going to make this post sleeve diet much better.
Yes you can freeze the sauce for later. Just thaw it in the refrigerator. As for freezing individual servings, you can, but I normally under cook the veggies a bit. I find they take to freezing better that way and won't disintegrate when you thaw/heat up. Let me know how it turns out for you.
I've never cooked with duck fat. Is it better or tastier than ghee, butter or various oil options (olive, avocado, etc)?

🔔Note: Traditionally Philly Cheesesteaks are made with thinly cut rib-eye steaks. However, they can be costly. Good alternatives include top sirloin or skirt steaks. For those of you on a tight budget, ground beef can be used as well, just make sure it is well drained after you brown it.
◾Cheese Sauce Ingredients:
¾ C Heavy cream
2 C cheddar cheese, grated
¼ C Grated Parmesan Cheese
2 tbsp. butter, unsalted and cubed
¼ tsp. Himalayan salt or sea salt
1/8 tsp. Black pepper
½ tsp. Paprika (optional)
◾Philly Cheesesteak Ingredients:
2 lbs. Steak (rib-eye, top sirloin, skirt)
1 tbsp. Ghee or tallow
1 Small onion, thinly sliced
Kosher salt
2½ tbsp. Duck fat, divided (can also use ghee, butter or light olive oil)
1 tbsp. Butter, unsalted
2 C White button Mushrooms, sliced
1 Medium green pepper, thinly sliced
1 Medium red pepper, thinly sliced
1 Small orange pepper, thinly sliced
Sea salt
Fresh cracked black pepper
1 Batch of cheese sauce (optional)
10 Pepperoncini peppers, sliced (optional)
4 oz. Provolone or Swiss cheese
✅Directions
1. Place steaks in freezer bag and place in freezer for 30-45 minutes to make the steaks easier to cut into thin slices.
2. While steaks are freezing, begin shredding the cheddar and Parmesan cheese for the cheese sauce, and slicing your onion, peppers and mushrooms.
3. Remove steaks from freezer and slice into thin strips. Place in a bowl and season with sea salt and pepper. Set aside.
4. Preheat oven to 350; lightly grease a casserole dish and set aside.
5. If making cheese sauce, pour cream into small saucepan over medium low heat. Once cream is warm, add ¼ cup of cheese to the cream at a time, stirring until melted before adding in more cheese. Stir in butter and season with Himalayan salt and pepper. Turn off burner but keep pan on stovetop near the oven heat source to keep warm. Stir occasionally to prevent a thin skin forming on top of sauce.
6. In a large skillet, heat 1 tbsp. of ghee or beef tallow over high heat. Once fat is sizzling, working in batches, add in steak; cook for 1 minute on each side. Next, place meat on cutting board and chop into smaller, bite-size pieces; place steak in a large, clean mixing bowl and set aside.
7. Wipe the skillet clean with a paper cloth (careful as it is hot!) and heat ½ tbsp. of duck fat and 1 tbsp. of butter over medium heat until sizzling. Add in onions and stir to coat with the fat. Continue stirring until onions are soft; season with a pinch or 2 of kosher salt. Reduce heat to medium-low and continue to cook onions, stirring every 1-minute to prevent them from sticking or coloring too much. Onions are finished when blonde-colored, about 10 minutes. Place onions in bowl with steak.
8. Wipe skillet clean and heat 1 tbsp. of duck fat over medium heat until sizzling. Add in mushrooms, stirring to coat them with the fat; sprinkle a pinch of kosher salt over mushrooms. Stirring occasionally, until mushrooms release water. Turn heat to medium low and let water evaporate. Once water evaporates, cook mushrooms for 1-2 minutes more to brown. Place in bowl with steak and onions.
9. Next, heat 1 tbsp. of duck fat in skillet over medium heat until sizzling. Add in peppers, season with salt and, stirring occasionally, cook until softened. If desired, place peppers on cutting board and chop into small bite size pieces. Place in bowl with steak, onions and mushrooms.
10. Add cheese sauce to bowl and stir to combine all ingredients. Pour mixture into casserole dish. Top with chopped pepperoncini, if using, and provolone cheese. Bake until cheese has melted, about 10-15 minutes. After cheese has melted, you can broil for about 5 minutes to brown if desired.

These are "sur la table" pans, and I bought them out of their store in Virginia. I'm sure you can get them online though (because it's 2018 lol). I love them too -- very nice, and seem to last longer than teflon. Cheers.
