I am Google IT Support Professional Certfied and I can actually say that it is a great Certification to get basi IT knowledge, for me it is the best starting point.
Im going to apply for Entry level IT jobs. One question - what is the difference between IT/Helpdesk Support and IT Technician? I know a lot about software / hardware / servers / AD, etc. Is the interview hard to pass for an entry level? Thank you
It depends. Read the job descriptions. At that level these job titles can all mean the same. It depends on the company and the hiring manager. So, the job description should give you more information. But in general an IT Technician is most likely more involved with fixing the actual computer or goes to the desk of a user while a helpdesk support person is more likely to work on the phone.

A of mine was developing software, but I've learned that coding is my weakness so far. I have intermediate experience with troubleshooting and hardware. I'm having trouble deciding between Software Development, Systems Admin, and Cybersecurity. Any advice on choosing between the 3?
It depends a little bit on your personal interests, but Cybersecurity will be a great long-term option that pays well and will offer a lot of different roles within Cybersecurity. On the sysadmin side of things it is good for long-term as well, but cloud and AI add some unknowns to the mix. Cloud is definitely the right approach for you, but I would expect some changes in that area.

Yes, absolutely - but don't let this scare you away. Focus on software applications and the operating system. If you become a subject matter expert for a challenging software package, know how to use it, troubleshooting, installations, etc - you can carve out a niche that opens even more doors down the road.
Either one works and a lot of the content is overlapping. I would probably start with the Google Certificate as you will not have to pay separate exam fees and it allows you to go after Comptia with more confidence.

dude the hardware/repair stuff is easier then you think . you can get a used pc for cheap online and take it apart and put it back together.
