I've found that when I crack open the derby cover, the primary oil drains out a lot faster.
The derby cover on this bike is just for show. The chain access cover is the only way to add oil and some genius decided to glue it on with RTV.
Where did you get that oil filter socket
I've had it for a while. I think I got it online from J&P Cycle.

There is very little oil in the motor. These are a dry sump oil system.

@zoomzoom3950 Harley pipes should fit the engine, but you might have to fabricate some sort of mounting brackets.
