- Cheese. It comes in more than 2,000 varieties -- hard, soft, fresh and aged - and it's been with us for thousands of years. Take a journey to Cowgirl Creamery in west Marin to learn how artisan cheese is made and how scientists are putting cheese under the microscope to gain new insights about this incredible, edible food.

Wait so basic cheese and tofu are made in a pretty similar way... would that mean that tofu is bean cheese?
I'm eating cheese at this moment
Sad vegans, some probably don't know they're missing! I fucking love cheese so much I sometimes slice it and eat it straight.
Yeah there's no good vegan replacement for cheese. Nutritional yeast is amazing but even that fails to convincly replace cheese
Thank you so much for this video. Super helpful and well-presented. Your time and effort is most appreciated!
"We use MRI to look at feta cheese"
If it ain't Pecorino, I ain't interestino
I watched this and began to get extremely hungry
I never thought I’d be watching scientists experiment on a piece of cheese...
Very good video thank you
6:35 wow she loves her job
I was feelin a cheese documentary :P
I like a nice sharp bitey cheddar cheese that is at least 30 months old.
1973Washu me too my cheese budget is out of control been loving a 5 year cheddar from grass feed cows its naturally orange from the milks quality!
"in twenty ten......." alright.. it is my first time to hear people say years that way
California may have their brands, but Wisconsin is the dairy state.
Holy cow I love cheese!!!
I think my cheese addiction just commuted suicide. Something about tasting the animal, what it ate, and the bacteria used to ferment or cheesify it - while the end product is delicious - makes me realize why so many people struggle to digest it and also creates the most repugnant image to mind. Yay bacteria? PS: VALLEJO was a leader in dairy.
Bread and lots of other foods are also made using bacteria, it's actually quite normal.
I HAVE A STRANGE OBSESSION WITH CHEESE
love a bit of dat cheese
Yumm!
I WANT MORE CHEEEEEESEEEEESEEESEES!
This man emits big cheese energy
So interesting.
Old I thought cheese was old ass milk...

Moldy Cheese is my favourite, to bad they don't sell it. _:/_
Yes they do, go to a cheese artisan not the grocery store.
Blue cheese (with mouldy blue veins) seems like your cup of tea (or fromage).
I LOVE CHEESE
I crave cheese
Lol in Wisconsin it's mandatory to be taught how cheese is made in like 3 grade that's why Wisconsin is the cheese state
I wish I lived in Wisconsin. Because I fucking love cheese
Based2kgod14 if you lived in a small city like I did for high school you could even work the summer farm jobs and basically get unlimited cheese lol
I'm feelin Hungary

We know what we eat.
2. Please use herbs for flavoring food.
I need cheese
I Love Cheese
What's crazy cheese
?
But the bacteria is dead when we eat it right?
It's really sad that cheese gets a free MRI when the people that actjually need it can't get it with proper healthcare.
im eating cheese so i ended up here...
00:31 haha lady calm down.
THe narrator sounds like dory from finding nemo...

@1:30: It's strange (disappointing) to hear a scientist relay conjecture and apocrypha as fact.
If you don't love cheese... Then you're a vegan.
Cheese.

Online school gang
Yo
no
so much other stuff in cheese,,doesnt sound natural to me,,still tastes good though
"The curds are almost like little babies; it's like shepherding them into the world."
Mmmmkay....
smoke cheese
Good
Sick side Worldwide Everyday?
Indeed as much as possible
I don't think there is anything artisan about this cheese. Pasteurizing and adding lab made bacteria rather than letting the natural milk bacteria grow is not artisan nor organic. Artisan cheese actually has to be made with traditional method using natural culture, rennet, molds and bacteria.
cheesy feet
They're talking like cheese was made in the USA...
+Kenny K American Cheese is gross, I'll admit. The Swiss and the Italians have cheese down to a science.
+TheZeldaBigMacintosh A single cheesemaker in the bay area probably has hundreds of competitors in that same area. All of them are trying to make a product they can charge top dollar for and hopefully will sell it Michelin starred restaurants and in wineries across California. Competition is no doubt fierce, I bet some of the cheeses from the top cheesemakers in the bay area compete in european contests against many european cheese makers.
I mean just because we invented airplanes doesn't make us the only country in the world who makes good modern aircraft. That's nonsense.
+Kenny K French cheese are the best on this planet. Just saying. The dutch one are very simple but they are loved in France.
That is true, but can you blame us? We are often focused on our own business, often for the worse, and don't consider other countries or rather even the origin of the subject.
Yes, I do realize I am insulting my birthplace, but can you blame me?
+TheLoZKing don't forget the French :)
I think with the new interest in cheese making the
American cheese" the overprocessed, tasteless time is making way for real cheese. But for real cheese you need real milk from grassfed cows (the ones in the video clip were such - not sure if that is the case every where) The fear of unpasturized is still engrained in the American mind set....... a long way to go yet, but it is a start, even though a highly scientific with electron microscopes and MRI - back to basics any one? less artificial ingredients and more original? Oh, I forgot: if we cannot scientifically prove it it does not exist LOL
Crumb.

Overdone yes. Burnt no.

1. Please stop adding bacteria to food!
Some cheeses stink
Cheese is not good if it is young and not aged - it simply wont have the flavour. The tanginess comes with aging cheese and it tastes better
+JB 6000 wrongo...I've definitely tasted tang, day one, with many cheeses, my friend...I make cheeses all the time
Wow...look at how we are using technology these days 🤮🤮🤮
1:27
cross contamination ?....:(
blue mould on the knife from previous cutting ...
parmasan will get more mould on the surface later which you need to cut off to display it nicely ...so basicaly you loosing money with this small but big mistake...
we all learning...peace:)
The cheese is going to be put in a fridge or consume immediately, there isn't much time for mold to grow, nor the proper environment.
I hate cheese... why am I here?
Cheese separates mother from child and supports the veal industry. It is also 70% fat. Booooooo cheese.
chut up
That's true. But we live in a world where people are too ignorant to know the truth.
Some little bitches don't know how to enjoy works of art.
mothers are overrated and veal is tasty
fuck you, worthless liberal.
unhealty
I don't eat cheese anymore, but I'll admit that it tastes great. However, let's not fool ourselves...cheese is bad for you. Period.
Dude. I care not about cheese. T^T
