Thank you for everyone who took the time to say that carrots are not keto friendly. I will keep them out of this meal. And for those saying carrots are keto friendly in 'moderation' then by that mindset ANYTHING can be keto friendly as long as you eat the right amount of 'grams' for it.

Carrots are keto friendly in raw format - 17 GI versus 72 when cooked. When the soup has been refrigerated, eat grated carrot separately with sardines/tuna with spring water and flavor with herbs and spices. Add a dollop of low fat, high protein yoghurt/cottage cheese with spices of your choice as long as they are not mixed. Not Cajun/Chinese or barbeque but pure peppers, chili, cayenne pepper etc. Add cucumber and endive lettuce. Add pure lemon juice and even a teaspoon of Cold Pressed Olive Oil. I would discourage you from adding salt in the form of stock or salt granules themselves as it counter-intuitive to the purpose of the soup. Add Garlic and other proteins to the soup such as mince - drain the fat first and then add more protein. Add proteins such as a bag of frozen spinach. The more protein you add, the more sustainable this diet is rather than just a quick fix.

Carrot is very conducive to weight loss but it needs to be raw. The GI index for raw carrots is quite low, post cooking exponentially increased (17 versus 70+) Adding cold uncooked grated carrot on the side with a teaspoon of Apple Cider Vinegar is actually incredibly beneficial for your heath and weight loss. Just don't eat it heated or post steamed/cooked/grilled.

Keto is low carb, not no carb. Who sits down to a huge bowl of carrots? Adding a little occasionally is fine. It depends on how extreme you want to be.
I agree about the cooked carrots, better served grated and cold separately. Onions and Bell Peppers are healthy and as long as you restrict the contents on a daily/weekly basis - I don't see the harm. If you are trying to lose weight, make it sustainable and healthy. Eat as many healthy proteins as you can to maintain muscle health and just aim for optimal health, weight loss will follow. Have a day off every now and then. Don't it rule your life.

Same as apples. The GI index of carrots and apples rise exponentially during the cooking process. With some vegetables and fruits it does not make much of a difference but apples become caramelized even without the sugar when cooked and carrots glucose index barometer rises exponentially within the cooking process. Grate your carrots raw, eat them with endives and an omega rich food of your choice sprinkled with herbs and spices and perhaps some avocado/olive oil/lemon juice sprinkled with black pepper but eat separately to the soup and in moderate portions.

These all look like very delicious soups, but onions, carrots, and red bell peppers are pretty high in sugars.
