The pickled papaya called “atchara” is usually eaten best as a side with any grilled meat like liempo, inasal or fish. 😍 it cuts down the fat, oil and salt when eaten together. ☺️

If your mom loves Sinigang, let her try Shrimp Sinigang. I think she will love it too. Here in the Philippines we love mixing the grilled pork belly with Ceviche. Here we call it Kinilaw. Ceviche or Kinilaw is raw tuna cut in cubes, mixed in vinegar, lemonsito, chili peppers, sliced radish, sliced cucumbers, vinegar, and a bit of sugar and salt. When you add the grilled pork belly in it, it turns up into a whole new level.. so delicious. Also try the grilled Tuna Panga (Tuna Jaw) dipped in soy sauce with lemonsito and chili pepper. Here in the Philippines, we usually make the pork belly with tuna ceviche and also the tuna panga, Pork barbecue and Chicken Inasal when we go to the beach so the tropical ambiance match the food perfectly.
Again, in my other comments you should try the Pork Patatim. And please do a mukbang of a Whole Lechon de leche or Lechon biik with your friends. Its a young roasted pork. The younger, the leaner it is with less to zero fat and very crispy skin and very tender meat dipped in different choices of Filipino dipping sauces (pork liver, the filipino vinegar sauce with spices, and the Mang tomas lechon sauce). And dont forget the Coca cola to perfectly match the Lechon! You will absolutely enjoy it especially when eaten whole coz you’re the one that will pull off that crunchy juicy skin. God bless! ❤️🇵🇭

The one you called "longsilog" was probably just a type of longganisa. The "-silog" part means sinangag (fried rice) and itlog (egg). You were missing the rice and egg. There are other "Silog" combos.

The Atsara (pickled young papaya) is supposed to be eaten with the Inihaw na Liempo (bbq pork belly). A vinegar (anything acidic) based sauce or dip works best with the bbq pork belly to counter the fatty richness.
