I haven't had the RC120 in my hands, but it seems like the inferior bike. Max tire clearance 32mm with 17mm wide rims, while the 500 has 36mm and 19mm wide rims 2x8 Microshift is decent, although the 2x9 Shimano Sora is better. The biggest downside for me personally is the crankset. The RC120 has a square tapered bottom bracket, while the 500 have Shimano's hollowtech. My personal advice, if money is tight, maybe look for a used model or Decathlon's second chance bikes.
Currently not, there are multiple sales going on which offer a better bike for similar money. And Black Friday is coming up, so I think that those offers will only multiply.

No not really, Mavic Aksium are the first that come to my mind, but there are plenty other options out there.
