    Bean sprout japchae (serves 4)
    [Required ingredients]
    400g bean sprouts, 100g glass noodles, 1 handful of green onions, 100g fish cake, 1/2 red bell pepper, 1/2 yellow bell pepper, 100g carrot, 100g oyster mushroom, 2 spoons of aronia extract, 1 spoon of sesame oil
    [Seasoning ingredients]
    5 spoons of soy sauce, 3 spoons of sesame oil, salt, pepper, 1 spoon of sugar (or oligosaccharide)
    [Cooking instructions]
    1. Clean the oyster mushrooms and tear them into pieces.
    2. Soak the glass noodles in hot water and prepare. At this time, add oyster mushrooms as well.
    3. Cut the green onions into 3-4 pieces and separate the roots and leaves.
    4. Cut the fish cake, paprika, and carrots into strips and prepare them.
    5. After cleaning the bean sprouts, put them in boiling water with 1 spoon of salt and boil them for 3-5 minutes, then rinse in cold water.
    Tip. Rinse them quickly in cold water to remove the heat to keep the crunchy texture.
    6. Remove the moisture from the noodles and mushrooms and rinse them in cold water.
    7. Put oil in a preheated pan and stir-fry the vegetables in the order of the green onions, carrots, and fish cakes.
    Tip. Sprinkle a little salt on the green onions and carrots. Adding aronia extract when stir-frying the fish cakes will help remove the fishy smell.
    8. Lightly stir-fry the paprika and green onion leaves. 9. Oil the pan, add the noodles and mushrooms, and mix with soy sauce, sugar, sesame oil, and pepper to season.
    10. Stir-fry the seasoned noodles and let cool.
    11. Add the bean sprouts to the bowl with the vegetables and mix with a little sesame oil.
    12. Add the noodles to the ingredients and mix lightly.
    Tip. If you mix too hard, the beans from the bean sprouts will fall off. Mix gently.
    13. Put in a bowl and sprinkle with sesame seeds to finish.
