  • KHEER & PHIRNI RECIPES - It's best to keep it simple, but...the simplest of recipes can be sometimes the most difficult to make! Kheer or Phirni for example. I have tried to deconstruct and simplify खीर & फिरनी recipes for you.

    KHEER PAATHSHALA
    Preparation time 15 minutes
    Cooking time 35-40 minutes
    Serving 4
    Ingredients
    For Kheer
    50-60 gm Short grain rice (Kolum, Sona masuri), washed & soaked , चावल
    1 ltr Milk , दूध
    Few Vetiver roots , खस की जड़
    100 gm Sugar , चीनी
    For Garnish
    Almond, sliced , बादाम
    For Phirni
    50 gm Short grain rice (Kolum, Sona masuri), washed & dried , चावल
    1 ltr Milk , दूध
    ½ cup Milk , दूध
    1 tsp Saffron , केसर
    100 gm Sugar , चीनी
    For Garnish
    Pistachio, sliced , पिस्ता
    For Gulatthi
    1 cup cooked Rice , पके हुए चावल
    ½-¾ cup Water , पानी
    ¾-1 cup Milk , दूध
    1 ltr Milk , दूध
    2-3 Green cardamom, crushed , हरी इलायची
    ¾-1 cup Sugar , चीनी
    2 tbsp Rose water , गुलाब जल
    For Garnish
    Dried Rose petals , सूखे हुए गुलाब की पंखुड़ियां
    Process
    For Kheer
    In a kadai add milk bring it to a boil then add the washed & soaked rice.
    Let it cook on medium heat for some time then add the vetiver roots in a muslin cloth and continue cooking until the rice has cooked properly.
    Remove the roots from the kheer and add sugar in it, stir it properly and give it one last boil then switch off the flames.
    Serve hot or cold and garnish with sliced almonds
    For Phirni
    Take the washed, soaked & dried rice and make a coarse powder.
    Put this powder in a bowl add milk, saffron and mix it properly.
    In a kadai heat milk then add the milk rice mixture and continue cooking on medium heat until the rice has cooked and the mixture has thickened.
    Now add sugar and continue cooking for another 3-4 minutes and switch off the flames.
    Serve hot or cold and garnish with sliced pistachio.
    For Gulatthi
    In a bowl add cooked rice, water and roughly mash the rice with ur hand then add milk and milk everything properly.
    In a kadai heat milk and add the rice mixture, green cardamom and continue cooking on medium heat for 6-8 minutes
    Now add sugar, rose water and cook for another 3-4 minutes, switch off the flames.
    Serve hot or cold and garnish with dried Rose petals.

    Chef Ranveer is amazing! I made this recipe the first time in my life for a gathering of friends, and everyone said it was the best kheer they tasted in their lives! I rarely get such immense approval on the first try. Chef Ranveer knows what he is talking about. I have used many of his recipes in the past. The best part for me is the history, discussion and a visual recipe. I always had trouble learning anything from cookbooks, but his videos are fun!.

    You're just amazing.... I'm from Assam bt living in bangalore.... Ghr mein toh kuch nhi krti thi, bt yaha aake sb khud hi krna pdta h... Roz Roz same dish bna ke khane ka mn bhi nahi hota..... Bass apka video lga leti hu... 10-15 minutes apka video dekh leti hu, aur 1 ghnte mein khna ready..... Dikhne mein hard dish bhi aap easily bna lete ho, samjha dete ho.....     Ranveer,
    My mother was making kheer where the consistency was little bit thinner than you did. Now at the age of 77 years I still follow her method. She was adding only one fist of small grain raw rice for one litre full cream milk. She was not adding saffron. Only cardamom powder she was adding along with few cloves. I still follow her method and enjoy the khir.
    She was preparing the previous night for the next day breakfast or lunch. At that time we were not having refrigerators. She was transferring kheer to separate small bowls covered with plates and was keeping one side of her kitchen. She was born and brought up in East Bengal.
    I still remember those days.

    kheer may b found as sanskrit word kshirika meaning a dish prepared with milk. In the 14th century padmavat of Gujarat. Known by various names as payesh,payasam, firni, kheer is a indian dessert that's loaded with our myth, rituals, legends, tradition and history and it's still taste is divine..it would not be wrong to say that good food can truly brighten up our day. thank u chef. food is a language of love nd care 😊❤️❤️❤️🙏

    Bengalis use Gobindo Bhog rice for kheer. It's very fragrant and glutinous, as you mentioned. Also, the rice is lightly fried in ghee before adding to the milk. This helps in retaining the shape of the rice grains, in spite of softening.

    This recipe was very confusing for me as all the things were in making together ....but this was not the case with other recipe of yours which you were making together at a time...I did not understand this one....but you are a great chef sir 😊😊amd like your other recipes
