My eight year old has a hard time sleeping unless I put on Chef John for her. She says his voice just helps. And she loves cod and is wild about potatoes, so it all works out, which is nice.

Cod is my favorite fish, and I’m always looking for recipes with cod that aren’t fried or battered. I made this tonight (dill replacing tarragon, and adding black pepper), and it wasn’t just the best cod recipe I’ve made, it was one of the best meals I’ve ever made (and I’ve been cooking for more than 50 years). I served it with some fresh homemade coleslaw (cabbage, carrots, diced apples), and peas. 10 stars. My husband literally licked his plate clean. LOL
I just made this tonight. Delicious! My husband brought a bunch of fish home from a trip to Alaska so I'm always looking for new recipes. I used rockfish instead of cod because that is what I had. My husband says I need to make this again. 😊

This sort of reminds me of an Icelandic dish we call "plokkfiskur"...roughly translated it means "picked fish". We traditionally use leftover white fish (usually cod, otherwise haddock) and potatoes, along with some onions and seasoning in a roux. Often you take the finished product, put it in a dish and add cheese on top (gouda is the most used and widely available in Iceland) and broil for a couple of minutes 😋

I made this exactly according to the recipe (with dill since I couldn't get any tarragon) and it was excellent. Since I needed a first course today and had some cod left I made it again, but replaced the lemon with a 1/4 cup dry sauvignon blanc and a teaspoon of fine Dijon mustard. I put a big tablespoon of the potato/butter mix in each of 4" ramekins, added about 1 oz. of cod and some thin sauce, then spooned on the reduced sauce and added a nice layer of Parmesan. The dish is so rich a small ramekin is more than enough as a first course. I can really recommend this recipe. Thank you, Chef John.
Just made this in individual disposable aluminum loaf pans for the family. It was a hit! One thing I found to cut the richness was a healthy grind of black pepper over each serving. Nicely done!
As I was shopping at Lidl last week they had frozen Pacific Cod on sale for $2.99 a package, I think it's 1.5 lbs., And I bought a package, wondering what I should make with my value, and just like that, John helps me, thanks for sharing!

Chef john, very nice recipe & me being irish this is a staple dish for us, only changes, we use no cayenne, & on the cod we use the loin which you can find matching sizes/ portions placed whole on the taters. They only cost $1.00 U.S. more per lb. than the filets, it is delicious

I had to go to two stores to find the tarragon!!! followed the instructions, served and it was a huge hit, very delicious, thank you. On a side not. as I was bringing the dishes to the kitchen after dinner I noticed the tarragon still sitting in it's little dish unused..... Next time.

I know I would LOVE this dish! I grew up with cod fish chowder, with milk, potatoes, onion and cod (ONLY Atlantic cod will do!) so similar flavors. My family lived in Bedford MA not so far from Boston where cod is king! Now I live in the Bay Area, not so terribly far from where you live, Chef John, and cod has been difficult to get here for years. I have many favorite dishes I make (fish stews with tomato, some Spanish style with paprika, baked cod with tomatoes, peppers and Mexican flavors like salsa, also I’ve made Boston fish cakes with salt cod….I’m always on the hunt for it but I rarely find it anymore. Fish markets have gone. I recently found it at Whole Foods but it’s not a regular item. Where, oh where do you buy your cod? I made the honey garlic shrimp from last week and it was fantastic. In fact, I made it twice and used up my bag of frozen shrimp. I’m not much of a fish person but I could definitely see my way clear to trying the above recipe. If it involves potatoes, butter and cream, it has to be good.
@Heartsongsutube if you’re a spinach lover try spinach and codfish. Fritters is another easy to do, they’re excellent with your favorite dipping sauce.
I finally had a chance to make this dish. I had a couple small filets if cod left over from a fish soup/stew I've been trying to master... Anyway, I needed more fish for this dish. Did I get more cod... No! I got some frozen tapia. Cut everything into 2" squares. Followed all of Chef Johns instructions. Mine turned out rich and creamy. The cod was tender and full if flavor. The Tapia was tough... Note to self...Use cod and cod only.

Try it with some raw cheese if you can get it, much healthier then Gouda. Even dutch people prefer other cheeses then Gouda 😂

Your Icelandic dish is what we call Fish Pie in uk. We may add other ingredients like prawns and salmon along with the cod/haddock.

Typically 'Cod au Gratin' is simply cod in an herbal or cheesy cream sauce with a crisp bread crumb topping.
