I like to pair it with my orzo salad but you can use it just like pesto. 🤌 RECIPE (2-3 servings, 10min prep time): -3 big handful greens, I used rocket -40g cashews or other nuts -juice of 1/2 lemon -salt and pepper to taste -2 Tbsp olive oil Blend until smooth. Keep in the fridge up to 4 days. Kleiner Tipp am Rand: zum mixen kein Olivenöl nehmen. Mörser ja, mixen nein, das wird nämlich bitter (gilt für native Öle auch). Deswegen am besten erst mit möglichst wenig neutralem Pflanzenöl mixen & dann zum Schluss das Olivenöl zugeben.

if you using parmesan or something similar there is no need for aditional salt, but in a vegan version it's way better to just substitute the cheese with more nuts and salt. you may not really get the creamy meltyness but the aditional fat from the nuts will make more then up for that. additional tip from my side (professionally trained chef here), use at least two diferent kinds of nuts it will make a rounder taste in the end. Macadamia or Walnut are my go to, pinenuts are classic, but pistaccios and pumpkin seeds also work and give a great twist to every Pesto.

Okay! This is BOMB but I was playing around in the kitchen - out of pasta but I had buldak ramen. I had accidentally bought the 2x spicy (I can barely handle the regular spicy one) so I used the pesto plus a teaspoon of the spicy sauce.. this was beautiful. Genuinely delicious.

You can make a tea! It's not going to taste nice but it's very healthy! It removes kidney stones (I got the tip from someone that had them) also parsley!
You can make chimichurri! Add cilantro, parsley, red wine vinegar, olive oil, garlic, chili, lime juice, salt and pepper. If you aren't vegan you can put anchovy in it aswell. You can put in on everything! Like on roasted potatoes, vegetables, eggs, steak or salmon.
Don't worry. She's fine. Nowadays people have forgotten what normal looks like. It's normal to be skinny at her age, and it's not unusual to stay that way growing up... I am 50 and thin, no thighs, no belly, no wobbly arm fat, shouldn't that be normal ? ❤

I haven't tried exactly this recipe, but in my experience cashews are a bit more sweeter than others nuts. The sweetness might come through depending on the greens you are using... if you don't want that, maybe sunflower seeds or almonds would be good instead.
If you're going for the most authentic experience, yes, a mortar and pestle would be ideal. That being said, this is more of a "save your leafy greens from spoiling" recipe.
But what about the delicious pesto flavor ? I have no doubt this spread tastes really good but the thing I love most about pesto is the basil flavor . Tjm tho obv

My mom taught me how to make this with moringa and mint, and she just calls it chutney. We also add some garlic to it

If you have white miso paste, add a spoonful. A good vegan Parmesan would also be lovely. Your mileage may vary with nutritional yeast.

you forgot garlic! I make a kale pesto for my kids all the time and they love it. For some added flavor I throw in a few sundried tomatoes.

Looks good, but its not pesto. Its puree. For Pesto you would have to use the mortar and pestle, not the blender. It makes a difference, trust me.
