  • These eggplants with vegetables in jars for winter are a delight. Tied with celery leaves, properly stuffed, it's madness!
    If I were to characterize them, I could say they are a kind of eggplants in brine, very tasty and appetizing.
    The recipe for eggplants with vegetables in jars is very simple, and I can say that they go perfectly with a roast, some potatoes, or maybe a pilaf.

    Ingredients for stuffed eggplants for winter:
    - 3 kg of small eggplants;
    - 500-600 gr of white cabbage;
    - 500 gr of red cabbage;
    - a good handful of celery stalks, enough to tie all the eggplants;
    - 4 small onions;
    - 2 garlic bulbs;
    - 3 small carrots;
    - 2 bell peppers;
    - 6 bay leaves;
    - 1 tablespoon of peppercorns;
    - 30 gr of salt for one liter of water (brine);
    - 1 tablespoon of salt for the vegetable mixture;
    - 30 gr of salt in the water used to blanch the eggplants;
    - 200 ml of sunflower oil.
    Optionally, you can sauté the onions and carrots in 200 ml of sunflower oil (see video), or leave them as they are in their natural state.
    If you sauté the vegetables, it is necessary to use a double boiler, for 25 minutes from the moment the water starts boiling, in order to cook the eggplants, resulting in eggplants in brine.
    If you want these eggplants to be pickled like stuffed bell peppers with cabbage (see video), then leave the jars to ferment.
    In this case, the vegetables are not sautéed anymore.
    If you want a combination of the two, meaning sautéed vegetables and then pickled, it is recommended to keep them in the refrigerator, they last up to 3 months.
    Let the vegetable mixture sit for about two hours to release its juices and become flavored.

    Nu cred ca pot pregati asa ceva. Nu stiu cum sunt vinetele in Romania, dar, in Canada, dupa ce le coci au interior seminre mici, multe si negre grupate de zici ca sunt lipitori. Inainte de coacere, daca tai vanata pe lungimea ei, carnea este alba si frumoasa si seintele alb galbui si foarte mici.

    Vinetele le punem în apa fiartă ?
    Dar varza o frecăm cu sare ?

      Vinetele le oparim, ca sa putem lucra cu ele, se inmoie si e mai usor de introdus umplutura. Plus in cazul in care ar fi amare, se mai scapa si de o buna parte din amareala. Sarea da cu sare.

    Dragă Paul astea cu bai mari,este acruță sau doar cea fără,bai mari?.Eu stau la bloc ,și am dulap unde țin murăturile,astea cu saramură cînd pot sa le folosesc?iar celelalte se pot mînca,imediat? trepuie neapărat să le țin la frigider?sau cum .Te rog mult sămi spui că nam făcut niciodată.😋🙂💯🙏👍🍆🥕🧄🧅🍽

      La bain-marie nu iese acruta, e mai dulce si asa o prefer eu. se poate lasa la murat ca la varzari, acei ardei umpluti cu varza si devine acruta. Sa stiti ca vor fermenta si cele facute la bain-marie, daca le vreti mai dulci le tineti la frigider si le mncati in max 2 luni, cu cele murate precum la varza, cand doriti.

    Varza se freaca cu sare...si ai uitat sa pui radacina de telina rasa in umplutura...Tu ai ales sa calesti ceapa si ardei, Noi nu faceam asta si sincer nu as face asta la muraturi.
    In rest, e aproape cum facea bunica-mea.

      Asa este, eu am ales sa le calesc, exista si varianta aceasta. Eu le prefer nu tocmai murate ci usor dulci, am mentionat si in video. Oricum au iesit delicioase. Multumesc de comentariu si apreciere!
