It's a quick and easy way for the less talented or harried working Moms to make a tasty dish everyone loves in a jiff without all the very involved steps of scorching, peeling, stuffing, frying, etc. I make the real deal chile rellenos for special occasions, but for a quick Friday night dinner, I make this, too. It's delicious! Dad and kids LOVE it. Only thing I would suggest differently, is I like to use the whole canned chiles, rather than the diced, but both work.

Yes you can use fresh chiles for this dish. You need to char them over a flame or grill them on a bbq. I should make a video on that don't you think? You want to blacken them completely, then place in a bowl covered with plastic wrap for about 10 minutes and then peel the blackened part off. cut off the end and remove seeds if you want. That's basically it.

My "Mexican" Grandmother used to make the "authentic", "traditional" Chili Rellenos for us when I was a kid. But, her delicious method took a very long time. They really were so darn delicious, but not something I could take the time to re-create with my hectic lifestyle and family now! Grandmother used to fire roast her fresh, homegrown chili peppers, and then mess with peeling them! Then she stuffed them up plump with cheeses and sometimes a spicy meat mixture too! Then she magically battered and fried each one of those rellenos up nice and puffy in... you guessed it... LARD! She used lard in her tortillas, her beans... basically everything! To me, Rockin Robin's yummy Chili Relleno Casserole is not only a whole lot easier and a lot quicker to prepare, but also much healthier too, because there is no lard! So enjoy it for what it is, a very yummy CASSEROLE! And then... Go enjoy the rest of the day that you'll have free now, because you are not slaving over that hot stove ;)

I absolutely love green chiles and for the past few weeks I have been eating chiles con crema several times a week. Great recipe! Thank you! I didn’t have 12 oz chilis but I did have 2 cans of diced jalapeños and added 3/4 can of ROL TEL diced tomatoes and chili’s - 5 eggs, cooked bacon beforehand so used bacon grease to grease casserole dish, added fresh ground pepper. My oven is a little off soooo my temp was about 335F and baked 35 minutes.... then shut off oven put back in for another 5 minutes and I’m in love 😍 this is soooo yummy. I’m sure a bit spicy for some but I love spicy 🌶 thanx again!

Rockin Robin's Cooking Mexican Recipes it turned out great. we have meals together all the time.(3 families) They work in town so I make dinners all the time do they don't have to cook. my husband picks up a the kids from school and we'll watch them untill the parents come home do they don't have to worry. we live them like they are my kids and grandkids

I like Anaheim chilies, cooked under the broiler til blackened and covered with foil a few minutes to loosen the skin.
a brown paper bag works well to steam the peppers prior to removing the blackened peel.

I love this recipe! I still love the original Chili Rellenos but the casserole is a great second especially when served with some chili verde sauce and sour cream and shredded lettuce! ❤

Rockin Robin's Cooking Mexican Recipes it turned out great. we have meals together all the time.(3 families)
They work in town so I make dinners all the time do they don't have to cook. my husband picks up a the kids from school and we'll watch them untill the parents come home do they don't have to worry. we live them like they are my kids and grandkids
